Day 1-

Skillet Chicken Pot Pie
Skillet Chicken Pot Pie is a wholesome healthy meal packed with veggies and chicken. It's creamy and perfect over your favorite biscuits for a fast weeknight meal.

Grocery items for skillet chicken pot pie:

  • Chicken breasts (2)
  • Yellow onion (1/4 cup)
  • Carrots (3)
  • Celery (3)
  • Russet potatoes (2 small)
  • Low sodium chicken stock (2 cups) I use better than bouillon roasted chicken base
  • Low-fat milk (1 1/2 cups)
  • Frozen peas (1 cup)
  • Flat leaf parsley (1/4 cup)
  • Store bought biscuits (6) or homemade
  • Light sour cream or Greek yogurt (1/4 cup)

Pantry Items:

  • Olive oil
  • Garlic powder
  • All-purpose flour (1/2 cup)
  • Fresh or dried thyme
  • Dried mustard
  • Worcestershire sauce
  • Salt and pepper

Day 2-

All of the delicious flavors of your favorite fried Chinese restaurant appetizer come together in a lighter, faster, one skillet meal! This “Egg Roll in a Bowl” is a quick and healthy dinner that’s ready in about 20 minutes!

Grocery items for egg roll in a bowl:

  • 1 lb Lean ground turkey, beef, or chicken
  • Sweet onion (1)
  • Garlic cloves (2)
  • Coleslaw mix 1 (16oz bag)
  • Carrot (1 large)
  • Green onions (2)

Pantry items:

  • Sesame oil
  • Rice vinegar
  • Ground ginger
  • Low sodium soy sauce
  • Salt and pepper
  • Hoisin sauce

Day 3-

Slow-Cooker Spanish Pulled Pork
The most tender, juicy, fall-apart pork with big bold flavors. Make tacos, serve over rice, or even a side of roasted veggies will do. This will be a new favorite.

  • 3lb pork top loin boneless roast
  • Red or yellow bell peppers (2)
  • Medium yellow onion (1)

  • Crushed tomatoes (28oz can)
  • Spanish green olives w/ stuffed pimentos (5.5oz jar)

  • Chili powder
  • Dried oregano

Day 4-

Easy Veggie Lo Mein
Lo Mein noodles in a simple Asian sauce with tender veggies is just as good, if not better, than any Lo Mein take out.
