These cookies are quite addictive so if you have zero self-control, I would encourage you to make them anyway. 😋 I love cookies with oats. It really adds heartiness and texture. Plus, they are good for you so it’s a win win! If you love apples, oats, and butterscotch chips, you will love the flavor of these cookies.

A combination of rolled oats and quick oats give this cookie the perfect texture. The grated apple adds a tiny bit of tartness (not too much) and the butterscotch chips are super rich and flavorful. These cookies are soft in the middle and slightly chewy around the edges. You won’t be able to eat just one. Easy to make and a perfect treat to share.

Apple Oatmeal Scotchies

A soft chewy cookie filled with oats, green apple, and rich butterscotch chips. Serve warm out of the oven or pack in a picnic. These are delicious anytime of day.

Ingredients

  • 1 1/4 cups white wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 stick butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 granny smith apple peeled and grated, about 1 cup
  • 1 1/2 cups quick oats
  • 1 1/2 cups rolled oats
  • 1 cup butterscotch chips

Instructions

Preheat oven to 375°F

  • Combine flour, baking soda, salt and cinnamon in small bowl.
  • Beat butter, granulated sugar, brown sugar, eggs and vanilla in large mixing bowl until creamy. Fold in grated apple.
  • Slowly incorporate flour until just combined. Stir in oats and butterscotch chips.
  • Using a small cookie scoop, or rounded tablespoon, drop cookie mixture onto large sheet pan with silicone mat or parchment paper for easy clean-up. Leave 2-inches in-between cookies.
  • Bake for 7-8 minutes until set in center and edges are slightly golden. For crispier cookies bake 9-10 minutes. Let stand 1 minute before transferring to a cooling rack.

Notes

Substitutions- Replace butterscotch chips with caramel chips, raisins or cinnamon chips.
Add-ins- 1/4 cup finely chopped nuts like- walnuts, pecans and almonds can be added in with the oats. 
Storage- Store in airtight container at room temperature for up to 5 days. Freeze for up to 2 months in airtight bag. Make sure cookies are completely cooled before freezing.

    I made some cookies like this in home economics class in 6th grade. I had the recipe for a very long time written on a piece of paper but lost it over the years. Everyone always loved them so this was the closest recipe I could find. The ones I used to make had green apple chunks instead of grating them. These still had the same taste and texture, a huge hit for my friends Yule party! Thanks so much for sharing
