Easy, Mini Apple Pies

If you love apple pie but don’t want to fuss with rolling out dough, these Apple Pie Bites are the perfect solution. They have all the warm, buttery, cinnamon-spiced flavor of classic apple pie, baked into adorable, bite-sized portions.

These mini treats make an easy, crowd-pleasing dessert for holiday parties or a cozy fall-inspired snack to enjoy at home. They also freeze beautifully, so you can keep a batch on hand for when those sweet cravings strike.

Easy Step By Step Apple Bites

  • Step 1. Combine the apples, spices, sugar, and water in a small saucepan and simmer until soft.
  • Step 2. Make the crust my cutting butter with flour, oats, brown sugar, and spices until crumbled.
  • Step 3. Press dough into the cups of a mini muffin pan, making a well in the center.
  • Step 4. Add a small scoop of apple compote then top with remaining crust for a crumble topping.
  • Step 5. Bake in the oven at 350℉ until set and golden brown.

These apple treats can be enjoyed warm out of the oven, and if you really want to indulge, serve with vanilla ice cream. They are also just as irresistible at room temperature, making them perfect for parties, lunchbox treats, or an afternoon snack.

Ang’s Helpful Tips and Suggestions

  • Use a pastry cutter like this one to help cut in the butter so the crust has an even texture. This will help it bake more even.
  • Grease fingers with a little butter or non-stick spray to help press the crust into the muffin cups.
  • Freeze leftovers to enjoy later. Let baked bites cool completely, then store in an airtight container or freezer bag for up to 3 months. Reheat in the oven, microwave, or enjoy straight from the freezer!

Ingredients

Apple Filling

  • 2 medium apples, peeled and cut in small 1/4 inch pieces
  • 1 tbsp white sugar
  • 2 tbsp water
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground cloves

Pie Crust

  • 1 cup all-purpose flour
  • 1 cup rolled oats quick oats is not recommended
  • 3/4 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 cup cold salted butter, cut in pieces

Instructions

Preheat oven to 350℉. Prepare mini muffin pans with non-stick cooking spray.

  • In a saucepan combine all the apple pie filling ingredients. Bring to a simmer on medium low and continue to cook and stir 5-7 minutes or until apples start to soften and mixture thickens. Set aside while you prepare the crust.
  • To a medium bowl combine flour, oats, brown sugar, and cinnamon. Add butter and use a pastry cutter to cut in the butter until you get pea size pieces. The crust will be loose but can easily be pressed together.
  • Add a heaping tbsp of crust mixture to the prepared muffin cups. You should still have some crust leftover—this will be used on top of the pies. Press the crust down into the cups and around the sides and create a well in the center. See post for image.
  • Next scoop about 2 tsp of apple filling into the center of each pie crust. Be careful not to overfill them. Top each pie with the remaining crust, like a crumble.
  • Bake for 15-20 minutes or until set and golden brown. Allow to cool in muffin pan for 10-minutes before removing to a cooling rack. Enjoy warm or at room temperature.

Notes

To remove the pies from the muffin pan, use a butter knife to carefully run around the outside of the pie. This will loosen it and should pop out easily.
