Some of my favorite foods come in small packages and these Bacon and Cheese Mashed Potato Bites could not fit the bill any better. They are perfect for parties, game nights, or even make as a side dish.

This recipe is great because we use leftover mashed potatoes and throw a few added flavors like bacon, cheese, and garlic. Who doesn’t love that? It’s so easy to whip up a batch of these bites, the only downside is they disappear too quickly.

Simple Ingredients:

  • Mashed potatoes- Use leftover mashed potatoes or make a quick batch and allow to cool.
  • Egg- The egg will help bind the ingredients.
  • Garlic powder- Adds additional seasoning to the potato bites.
  • Cheddar cheese- I use medium cheddar cheese.
  • Bacon- You’ll want the bacon nice and crispy.
  • Chives- This adds a nice touch to the top after the bites are baked.
  • Sour cream- The sour cream is not pictured but it’s optional for those that enjoy a little extra creaminess.

Substitutions and Add-Ins:

  • Cheese- A good melting cheese is perfect for these potato bites. Sharp cheddar, provolone, pepper Jack, Colby Jack, or Gruyere.
  • Meat- Use turkey bacon in place of regular pork bacon, or add in cooked and crumbled chorizo for a little spice and smoky flavor. Cubed ham would also be delicious. Make sure the ham pieces are diced very small.
  • Seasonings- Feel free to get creative with the seasonings. Try adding dried herbs or other spices to jazz up the potato bites even more.

Step One. Preheat oven to 375℉ and spray a 24 cup mini muffin pan with non-stick cooking spray.

Step Two. In a medium size bowl combine the egg and garlic powder. Mix in the mashed potatoes, cheese, and bacon until fully incorporated.

Step Three. Use a cookie scoop to spoon the potato mixture in prepared muffin cups. Fill just to the top of the cup and slightly press down. Bake in the oven for 25-30 minutes or until set and slightly golden brown on top. Sprinkle the top with fresh chives right when they come out of the oven. Serve with sour cream if desired.

  • Leftover mashed potatoes- This recipe is best using leftover mashed potatoes because when the potatoes have a chance to cool the mixture is easier to work with. If using freshly made mashed potatoes make sure to completely cool them before moving forward with the steps.
  • Seasonings for mashed potatoes- Keep in mind that using prepared mashed potatoes usually means they have been seasoned with salt and pepper. You may need to add more seasonings depending on how the potatoes were prepared.

  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked, crispy bacon, chopped in small pieces
  • chives to garnish the top optional
  • sour cream to dollop on top optional

Instructions
