Who can’t resist a crunchy tostada? Tostadas are the perfect foundation for various toppings making them one of the most versatile Mexican foods to work with.

We love tostadas and truly do not have them enough. These BBQ Chicken Tostadas with Jalapeno Ranch Slaw is a fun change from traditional tostada flavors. It still has all the delicious layers and textures only with a fun BBQ twist!

This tostada recipe is filling enough for a complete meal or make them for a party. Your guests will go nuts for them!

If you have leftover chicken you need to use, this is an awesome recipe for it. You can have these assembled, baked, and taking your first bite in under 30-minutes.

Simple Ingredients:

Ingredients for BBQ chicken tostadas with jalapeno ranch coleslaw. Tostada shells, baked beans, cooked chicken, smoked cheddar, BBQ sauce, coleslaw mix, mayo, Greek yogurt, jalapenos, green onions, cilantro, ranch mix, salt and pepper, lime juice.
  • Tostada shells
  • Baked beans- Use whichever brand you prefer. I like the bushes hickory brown sugar for this recipe.
  • Chicken- Use leftover chicken or a rotisserie chicken. Make sure to shred or dice in small pieces.
  • Cheese– I use smoked cheddar.
  • BBQ sauce- Use your favorite brand. We love Stubs and Sweet Baby Ray’s.
  • Jalapeno ranch coleslaw- Mayo, Greek yogurt, lime juice, ranch mix, salt, pepper, jalapenos, cilantro, and green onions.

Substitutions:

  • Beans- You can use refried beans instead of baked beans but I highly suggest you try the baked beans. The smoky flavor pairs so well with the BBQ chicken and smoked cheddar cheese.
  • Chicken- You can use just about any kind of chicken you like for this recipe. Shredded chicken thighs, rotisserie chicken, leftover chicken, or even cooked ground chicken.
  • Cheese– Other cheese options include cheddar cheese, pepper Jack, Mozzarella, or provolone.

How To Make BBQ Chicken Tostadas with Jalapeno Ranch Coleslaw:

Step One. Add baked beans to a small saucepan and use a potato masher to mash beans to the consistency of refried beans. Heat over the stove until warmed through.

Step Two. Make jalapeno ranch coleslaw by combining mayo, Greek yogurt, lime juice, jalapenos, green onions, cilantro, ranch mix, salt and pepper. Add coleslaw mix to the dressing and toss until combined.

Step Three. Next combine cooked chicken with BBQ sauce.

Step Four. Assemble tostadas by adding a layer of mashed baked beans, followed by BBQ chicken, then top with smoked cheddar cheese. Bake in the oven on a sheet pan lined with a baking rack at 350℉ for 10-minutes, or until cheese is melted. Top with jalapeno ranch coleslaw.

Tips:

  • đź’ˇUse a baking rack for tostadas. Add a baking rack on top of your sheet pan to keep the tostadas from sitting directly on the pan. This will prevent sogginess on the bottom of the tostadas.
  • đź’ˇServe tostadas right away. Make sure to serve these tostadas right away for the best crunchy experience. If the ingredients sit too long on the tostada shell it will become soft.

  • 1 medium bowl

Ingredients

Jalapeno Ranch Coleslaw:

  • 1 tbsp mayo
  • 2 tbsp full-fat, plain Greek yogurt
  • 1 small lime, juiced, about 1-2 tbsp
  • 1 tsp ranch seasoning mix
  • 2 tbsp diced jalapeno, seeds and membrane removed
  • 1/4 cup chopped cilantro
  • large green onion, sliced
  • 2 cups coleslaw mix
  • salt and pepper to taste

Tostadas:

  • 8 prepared tostadas I use a store-bought brand
  • 1 cup baked beans, liquid drained I like the Bushes hickory and brown sugar
  • 2 1/2 cups cooked, shredded chicken
  • 2/3 cup prepared BBQ sauce
  • 1 1/4 cups shredded, smoked cheddar cheese

Instructions

Heat oven to 350℉. Line a large sheet pan with foil and place a baking or cooking rack on top of the foil. See post for images.

  • Add 1 cup baked beans to a small saucepan and use a potato masher to mash beans to the consistency of refried beans. Heat over the stove on low until warmed through.
  • Meanwhile, combine 1 tbsp mayo, 2 tbsp Greek yogurt, 1 lime juiced, 1 tsp ranch seasoning mix, 2 tbsp jalapenos, 1/4 cup cilantro, and one large green onion. Add 2 cups of coleslaw mix and toss to coat the dressing with the slaw mix. Place in the refrigerator until ready to use.
  • Next combine 2 1/2 cups chicken with 2/3 cups BBQ sauce.

Layering Tostadas:

  • Spread 1 heaping tbsp of smashed baked beans on a tostada shell, top with 2 tbsp BBQ chicken, then sprinkle with 2-3 tbsp smoked cheddar. Place tostada on the prepared sheet pan with the baking rack and repeat the layers with the rest of the tostadas.
  • Once tostadas are assembled, bake in the oven for 10-12 minutes or until the cheese is fully melted and the shells have a toasted scent. Immediately top each tostada with slaw mix and serve right away.
