Blueberry buckle is an old-fashioned dessert that's kind of like a cross between a coffee cake and a fruit cobbler. It features a soft, buttery cake base that's loaded with blueberries and typically a streusel or sugar topping. As it bakes, the juicy berries and topping cause the cake to "buckle" crack, or sink slightly-hence the name.

Use Fresh Or Frozen Blueberries

I love when recipes allow for both fresh or frozen berries, especially if the berry is not in-season. The nice thing about adding frozen blueberries to this buckle recipe is they won't turn the cake a blue color. Plus, the extra moisture from the frozen berries keeps the cake super moist.

Easy To Make Blueberry Buckle

Preheat and prep- Preheat your oven to 350°F and lightly grease a 9×9 inch pan.

Make the cake batter- Combine all the dry ingredients--flour, baking soda, baking powder, salt, and also lemon zest in a medium bowl, and the wet ingredients--butter, sugar, eggs, almond extract in another bowl. Add the dry ingredients along with buttermilk (a little at a time) to the wet ingredients and gently stir to combine.

Fold in blueberries- Fold in half of the blueberries into the cake batter. Pour in prepared baking dish and top with remaining blueberries. Dust the top with sugar.

Bake your buckle- Bake in the oven for 35-40 minutes or until toothpick inserted in the center comes out clean. The top should be golden brown and slightly cracked. Allow to cool 10-minutes before slicing.

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 teaspoon lemon zest, about ½ medium lemom
  • 6 tablespoon salted butter, softened but not melted
  • 1 cup granulated sugar, divided
  • 2 large eggs
  • cup buttermilk
  • ½ teaspoon almond extract or use 2 teaspoon vanilla extract
  • 2 cups frozen or fresh blueberries, divided

Instructions

Preheat oven to 350℉ and grease a 9 × 9 inch baking dish with cooking spray.

  • In a medium bowl, use a whisk to combine 1 ¾ cups flour, 1 teaspoon baking powder, ¼ tsp baking soda, ½ tsp salt, and 1 tsp lemon zest.
  • In a second bowl, use an electric mixer to cream 6 tbsp softened butter with ¾ cups sugar. Mix in 2 eggs and ½ tsp almond extract until smooth and creamy, about 3-4 minutes.
  • Use a large spatula and add dry ingredients in three additions, alternating with buttermilk, gently folding ingredients with each addition. You should have a semi-thick batter.
  • Fold in half of the blueberries until just combined, then spread evenly in your prepared baking dish. Top with remaining blueberries and sprinkle remaining ¼ cup sugar over the top.
  • Bake in preheated oven for 35-40 minutes or until toothpick inserted in the center comes out clean and the top is cracked and golden brown. Allow to cool for 10-minutes before slicing into squares.
