What You Need

- Chicken- We use a rotisserie chicken to make this easier but any cooked chicken will work.
- Lasagna- Make sure to cook up one or two extra lasagna sheets incase you have any that break.
- Cheese- You'll need ricotta cheese, mozzarella, and parmesan.
- Pantry seasonings- Dried parsley, Italian seasoning, garlic powder, salt, and pepper.

How To Assemble These Rollups
- Combine filling in a mixing bowl---chicken, ricotta cheese, mozzarella, parmesan, alfredo sauce, and seasonings.
- Cook lasagna noodles and lay out on parchment paper in a single layer.
- Assemble lasagna sheets with some chicken filling down each noodle and roll up.
- Place lasagna rolls in a baking dish that has some alfredo sauce on the bottom.
- Finish rolls with the remaining alfredo sauce and top with mozzarella cheese.
- Bake in the oven covered for 25-minutes then bake uncovered for another 10-minutes.
- Broil the top if you want it browned. Top with parsley and serve.

- Don't overcook the lasagna sheets so it's easier to roll and prevent breaking.
- Use all the alfredo sauce. It will look like a lot but will be the perfect amount once the rolls are cooked.

Chicken Alfredo Lasagna Rollups
Equipment
- 9×13-inch baking dish
- medium mixing bowl

Ingredients
- 8 lasagna sheets, plus 1-2 extra
- 2 cups cooked rotisserie chicken, shredded or diced or any cooked chicken
- 16 ounce jar prepared alfredo sauce, divided
- 1 ½ cups shredded mozzarella cheese, divided
- ½ cup low-skim or whole milk riccota
- ¼ cup grated parmesan cheese
- ½ teaspoon dried parsley
- ½ teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- fresh chopped parsley to garnish
Instructions
Preheat oven to 350℉.
- Start by cooking the lasagna sheets in a pot of salted water until just al dente. Transfer onto a large sheet of parchment paper in a single layer. Do not rinse. The sticky starch on the pasta will help spread the filling easier.
- While the noodles cook, combine chicken, ½ cup alfredo sauce, ¾ cup mozzarella, ricotta cheese, parmesan, and all the pantry seasonings in a medium size bowl.
- Spread about ¼ cup chicken filling down one cooked lasagna sheet and gently roll up. Not too tight otherwise the filling will squish out of the sides, Repeat with the rest of the lasagna sheets and filling.
- Spray your baking dish with non-stick spray and spread ½ cup more alfredo in the bottom. Place rolls seem side down on top of the sauce, then pour the remaining alfredo over the rolls. Top with the rest of the mozzarella cheese, about 1 tablespoon on each roll.
- Cover rolls tightly with foil and bake in the oven for 25 minutes. Remove the foil and bake another 10-minutes. Option to place the pan under the broiler to brown up the top if desired. Garnish with fresh chopped parsley and serve.
Notes
- Fridge: Store leftovers in an airtight container for up to 4 days.
- Freezer: Freeze pre-baked or post-baked rollups for up to 3 months. Make sure they are completely thawed before baking.
- Reheat: For best results rewarm in the oven at 350°F until heated through. You can also gently microwave individual portions.
