Ingredients You Need

- Chicken– We use chicken breast but chicken thighs work as well.
- Broccoli– Fresh broccoli works best for this soup.
- Other veggies– Onions, garlic, carrots, and celery
- Chicken broth– Make sure to use a quality broth for the best flavor.
- Wild rice or use brown or white rice.
- Worcestershire sauce
- Butter
- Heavy cream
- Pantry seasonings

- Sauté onions, carrots, and celery with butter until softened, then stir in garlic, Worcestershire, and seasoning.
- Add chicken, rice, and chicken broth. Bring to a simmer and cook for 35-minutes.
- Remove the chicken from the pot and stir in broccoli. Bring back to a simmer and allow broccoli to cook for 10-minutes while you shred or dice the chicken.
- Add chicken back to the pot along with heavy cream. Continue to simmer for a few more minutes until thickened. Taste for salt and pepper then serve.

- Use more chicken broth if the soup is getting too thick and the rice still needs more time.
- Make it dairy-free: Skip the cream and swap for unsweetened oat milk or coconut milk.
- Use rotisserie chicken for even more flavor. Add it the same time you put in the broccoli.
- Add more veggies like, mushrooms, kale, or spinach to up the nutrient factor.
- For a cheesy experience, stir in sharp cheddar or parmesan cheese right before serving.

Chicken and Broccoli Wild Rice Soup
Equipment
- large soup pot with lid
Ingredients
- 1 tbsp butter or olive oil the butter makes it a little richer
- 3/4 cup yellow onion, diced
- 1 large carrot, peeled and diced, about 3/4 cup
- 1 medium celery stalk, diced, about 1/3 cup
- 1 small garlic clove, minced
- 1 tsp dried mustard
- 1 tsp dried thyme
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp Worcestershire sauce
- 2 medium size whole chicken breast, boneless/skinless
- 5-6 cups chicken broth
- 2/3 cup wild rice, rinsed under cold water
- 2 cups fresh broccoli florets
- 3/4 cup heavy cream or half and half heavy cream will make the soup thicker
Instructions
- Heat a large soup pot to medium heat and melt 1 tbsp butter. Add onions, carrots, and celery. Sauté until onions are soft about 3-4 minutes.
- To the veggies stir in garlic clove, dried thyme, dried mustard, Worcestershire, salt, and black pepper. Cook for 30-seconds, then add whole chicken breasts, chicken broth, and wild rice. Bring to a boil then turn the heat down to medium-low to simmer for 35-minutes with a lid placed half way on. Don't cover it completely.
- When the chicken is cooked, transfer to a plate. Meanwhile stir in broccoli florets. Bring back to a simmer with lid half on and cook for 10-minutes while you shred or dice the chicken.
- After the 10-minutes, rice and broccoli should be tender. Stir the chicken back in the pot along with heavy cream. Allow to simmer for 10-minutes to thicken. If you want more broth add 1/2-1 cup more. Taste for salt and pepper and it's ready to serve.
Notes
- For a cheesy experience, stir in sharp cheddar or parmesan cheese right before serving.
- Store in the refrigerator in a sealed container for up to 4 days.
- Freeze soup for up to 2 months. Make sure it’s completely cooled before placing in the freezer.
