- Stir in flour, then add chicken broth, half and half, sour cream, seasonings, and cooked chicken. Simmer and thicken.

- Oven safe skillet is used here but if you don’t have one just transfer everything to a baking dish.

Chicken Stuffing Casserole (no canned soup)
Equipment

- large oven safe skillet
Ingredients
- 1 (6) ounce box, chicken stuffing mix such as stovetop
- 4 tbsp butter
- 3/4 cup yellow onion, diced
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1 medium sweet potato, peeled and diced, about 1 cup
- 1-2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1 cup half and half
- 1/4 cup sour cream
- 2 1/2 cups cooked chicken
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried mustard
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
Instructions
Preheat oven to 375℉.
- Start by cooking the stuffing mix according to the package directions and set aside until ready to use.
- In a large oven safe skillet melt butter over medium heat. Stir in onions, carrots, celery, and sweet potato. Sauté for 4-5 minutes or until carrots and sweet potatoes just start to soften. Add garlic and cook 30-seconds.
- Next stir in flour and cook 30-seconds, then slowly add chicken broth. Whisk and bring to a simmer. The liquid should start to thicken. Turn heat down to low and add half and half, sour cream, chicken, and all the seasonings. Continue to stir and cook for 2-3 minutes.
- Top the chicken mixture evenly with the prepared stuffing, making sure to cover the surface. Note: If you don't have an oven safe skillet, transfer the filling to a greased baking dish and top with stuffing.
- Bake in the oven, uncovered for 25-30 minutes or until bubbling and the top is golden.
