If you want to make a festive and completely irresistible treat for the Holidays, this Cranberry Bliss Bark will check all the boxes. It takes very little time to prep and the only hard part is waiting for it to set up.

Saltine crackers are coated in a buttery caramel toffee, topped with silky white chocolate (use the good stuff!), tart dried cranberries, and toasted almonds. It’s rich, crisp, gorgeous, and perfect for sharing at any holiday gathering. Your guests will absolutely love it.

Ingredients You Need

You only need a handful of ingredients to make this cranberry bark recipe and zero skills required. It’s so easy! See the recipe card below for all the measurements and full instruction details.

  • Saltine crackers– You’ll need about 1 1/2 sleeves.
  • Brown sugar– Light brown sugar works best for this recipe.
  • Butter- We use salted butter.
  • White chocolate baking chips– For the best results, use a good quality chocolate like Ghirardelli.
  • Toasted almonds and dried cranberries– For convenience, use the almond cranberry salad topping, often found next to the croutons in the grocery store.

How To Make Cranberry Bliss Toffee Bark

  • Preheat your oven to 400℉ and prepare a sheet pan with foil and spray generously with cooking spray. Layer saltines in a single layer on sheet pan.
  • Next melt and combine butter and brown sugar in a saucepan. Bring to a simmer and cook until deep golden brown, like caramel.
  • Pour caramel mixture over saltine crackers making sure to cover the entire surface. Place in the oven and bake for 4-5 minutes, until bubbly.
  • Meanwhile melt down white chocolate chips in a microwave safe bowl until melted and smooth.
  • Pour the white chocolate over the crackers and use a spatula to gently smooth it out, covering the caramel toffee crackers. Immediately sprinkle with cranberries and almonds. Place in the refrigerator or freezer to set, then break into bark.

Helpful Tips For The Perfect Cracker Toffee

✔ Boil the toffee for the full 3 minutes

This prevents it from being grainy and helps it set properly.

✔ Don’t burn the toffee

If it smells sharp or scorched, restart—burnt toffee can’t be fixed.

✔ Line the pan well and use cooking spray

Toffee sticks to everything! Cooking spray along with parchment paper or foil is your best friend.

✔ Let the bark fully harden

A few hours in the fridge or freezer gives you clean, snappy pieces.

Variations To Try

  • For a citrusy twist add orange essence to your bark by using fresh orange zest over the white chocolate.
  • Mix in other nut combinations– Swap almonds for chopped pistachios, cashews, or pecans.
  • Swirl in melted dark chocolate for a beautiful marbled effect.

Storage & Freezing Instructions

Store bark pieces in an airtight container at room temperature for 4-5 days or refrigerated up to 2 weeks. To freeze, place in a freezer-safe bag or container, preferably with parchment paper between each layer. Freeze bark up to 3 months. Tip: I actually find the bark to be very good eaten straight from the freezer so no need to thaw when you want to enjoy a piece.

Can I Make Cranberry Bliss Toffee Bark With Gluten-Free Crackers?

I have not tested this but I’m sure you could. Use gluten-free saltine-style crackers such as Schär or Simple Mills.

Ingredients

  • 40 saltine crackers, 1 sleeve plus a few more
  • 2 sticks salted butter, 16 tbsp
  • 1 cup packed light brown sugar
  • 2 1/2 cups white chocolate chips or use melting wafers
  • 3.5 ounce almond cranberry salad topping or use a mixture of dried cranberries and sliced, toasted almonds

Instructions

Preheat oven to 400℉. Prepare a large sheet pan with parchment paper or foil and spray generously with non-stick cooking spray.

  • Place saltine crackers on your prepared sheet pan in a single layer to cover the sheet pan and set aside.
  • In a saucepan melt down butter and brown sugar over medium heat. Turn heat up to medium high and bring mixture to a boil. Allow to boil for 3 minutes without stirring. It should turn a deep golden brown like caramel. Be careful not to burn the toffee.
  • Pour the toffee mixture over the saltine crackers making sure to cover each one. Use a small spatula to spread out if needed. Place in the oven for 4-5 minutes until bubbling.
  • Meanwhile, place white chocolate chips in a microwave safe bowl. Heat in 30-second intervals stirring in between each time until the chocolate is fully melted. Pour over baked crackers while it is still warm and use a spatula to spread out over crackers, covering the surface.
  • While the mixture is still soft, layer cranberries and almonds over the chocolate. Allow to set 10-minutes, then place the pan in the freezer or refrigerator to set for a few hours until firm and set.
