Creamy Cucumber Tomato Salad Recipe
Creamy Cucumber Tomato Salad has been a recipe in our family for years. My mom made this often in the summer time for a quick side dish when her garden had a bounty of fresh cucumbers and tomatoes. You could be sure to find us hovering over the bowl long after dinner was over to polish off the last cucumber.

My mom's salad was simple with tomatoes, cucumbers, red onion, and a 3-ingredient dressing of mayo, vinegar and sugar. Over the years I've modified the dressing for even more flavor and creaminess, using dill and full-fat Greek yogurt.
While this recipe is perfect with fresh summer veggies, you can still enjoy this all year round. It's a wonderful side dish when you don't know what to make alongside dinner, or even a snack when you want something a little lighter.
Our family loves this salad so much we almost never have leftovers. I think you'll love it too!
Ingredients You Need
- Cucumbers- I like using English cucumbers for the best texture.
- Tomatoes- If tomatoes are not in-season, I look for ripe, sweet cherry tomatoes at the grocery store.
- Onion- Red onion has a nice flavor and doesn't over powder the other ingredients.
- Dressing- Mayo, Greek yogurt, apple cider vinegar, sugar, dried or fresh dill, salt and pepper.
The dressing for this recipe can be used as a base for other veggies or over a salad. Feel free to swap out the mayo for all Greek yogurt or use all mayo.

Step One. Combine all the dressing ingredients in a small bowl until smooth and creamy.


Step Two. Prepare cucumbers, tomatoes, and red onion and place in a large bowl. Pour in all of the dressing and use a spoon to fold gently until everything is well coated. Taste for seasonings and serve right away or place in the refrigerator until ready to enjoy.

- Marinate the salad- For the best flavor allow the salad to marinate with the dressing for 30-minutes before enjoying.
- The best cucumbers for this salad- Use English or Persian cucumbers. They hold up well with the creamy dressing and stay crunchy, plus, you don't need to peel them.
How long does this salad last?
This salad will last 2-3 days in the refrigerator in a sealed container.

Ingredients
Salad
- 2 English cucumbers, unpeeled, sliced in ¼ inch slices
- 1 ½ cups cherry tomatoes, or diced tomatoes
- ½ cup red onion, sliced thin
Dressing
- ⅓ cup plain, full-fat Greek yogurt
- 3 tablespoon mayo
- 2 tablespoon apple cider vinegar
- 1 ½ teaspoon sugar
- ½ teaspoon dried dill or 1 teaspoon fresh dill
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
Instructions
- In a small bowl combine all the dressing ingredients until smooth and creamy.
- Add the cucumbers, tomatoes, and red onion to a medium bowl, then pour in all the dressing. Use a spoon to fold gently until everything is coated. Taste for seasonings. For best results place in the refrigerator covered for 30-minutes before enjoying.

Looks so tasty, especially as the weather is already high 80s in north TX. Do you think adding canned tuna to it would be okay? I'd like to turn it into a light lunch.
