Some of the best recipes come from unexpected inspiration. A few weeks back, my neighbor made a delicious dinner with a creamy mustard gravy that immediately caught my attention. The sauce was rich, tangy, and incredibly comforting. I couldn't stop thinking about how well that flavor would pair with a simple skillet meal.
That inspiration led me to create this Creamy Honey Mustard Chicken and Broccoli Skillet. Tender chicken and fresh broccoli are coated in a velvety honey mustard cream sauce that comes together in one pan in about 30 minutes. Of course this combination is delicious over simple rice or mashed potatoes, but equally yummy for a low-carb friendly supper.

To save time, steam the broccoli in the microwave. Place florets in a microwave-safe bowl with a few tablespoons of water, cover, and cook for 3-4 minutes until just tender. it's quicker than using a pot on the stove and keeps the florets tender for the skillet.

How To Make Honey Mustard Chicken and Broccoli

- Step One- Brown seasoned chicken pieces in a large skillet with butter and olive oil, then transfer to a plate.
- Step Two- In the same skillet sauté garlic until fragrant.


- Step Three- Whisk flour in the skillet until it forms a paste, then slowly add the chicken broth, continuing to whisk as you pour. The sauce should start to thicken and become smooth.


- Step Four- Stir in heavy cream, whole grain mustard, honey, and parmesan cheese, then add the chicken back to the pan along with steamed broccoli.


- Step Five- Gently toss the chicken and broccoli with the sauce and allow to cook another 5-minutes. Taste for seasonings and serve immediately.

- Keto-friendly- To make this recipe fully keto-friendly, replace the all-purpose flour with arrowroot powder. Add 2 teaspoons arrowroot to the cold chicken broth and whisk to dissolve, then proceed with the recipe instructions.

Will Frozen Broccoli Work?
Yes, frozen broccoli can work if that's what you have on hand. However, fresh broccoli is recommended for the best texture and flavor. If using frozen broccoli, make sure to thaw it first and drain off any excess moisture to prevent the sauce from becoming watery.

Can I Make This Ahead Of Time?
This dish is best enjoyed right after cooking because the creamy honey mustard sauce is at its smoothest and the broccoli stays perfectly tender. Letting it sit too long can cause the sauce to thicken and the broccoli to soften more than desired.

Creamy Honey Mustard Chicken and Broccoli
Equipment
- large skillet
- medium microwave safe bowl
Ingredients
- 2 large chicken breast cut in bite size pieces
- 2 ½ cups fresh broccoli florets
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2-3 garlic cloves, minced
- 2 tablespoon all-purpose flour
- ¾ cup chicken broth, low sodium
- ½ cup heavy cream or half and half, sauce might be thinner
- 2 tablespoon whole grain mustard
- 1-2 teaspoon honey, or to taste
- ¼ cup grated parmesan
- salt and pepper to taste
- paprika to taste
- onion powder to taste
Instructions
- Season chicken pieces with salt, pepper, paprika, and onion powder. Do this to taste.
- Heat a large skillet over medium high heat and add butter and olive oil. Brown and cook chicken, about 5-7 minutes, then transfer to a plate.
- While chicken is browning, add broccoli florets to a microwave safe dish with about ¼ cup water. Cover and cook on high for 3-4 minutes. The broccoli should still be bright green with a tender, crisp bite. Set aside until ready to use.
- Turn heat down to medium and add garlic and cook until fragrant, about 30-seconds, then whisk in flour. Note: You need at least 1 tablespoon of fat in the pan for the flour to turn into a paste. Add a little more butter if needed before whisking in the flour.
- Slowly add chicken broth making sure to whisk constantly to incorporate the liquid with the flour. Whisk until a smooth broth forms. If you have lumps that don't go away you can always strain the liquid but it is not necessary.
- Once liquid is smooth, add heavy cream, whole grain mustard, honey, and parmesan cheese. Continue to whisk until the mixture thickens and can easily coat the back of a spoon.
- Add the chicken back to the pan along with any juices, and cooked broccoli, leaving behind any liquid. Toss gently and taste for salt and pepper. Serve immediately.
