Creamy Mashed Cauliflower

Mashed cauliflower doesn’t have to be an alternative to mashed potatoes. While lower in carbs, yes, this side dish is absolutely dreamy and creamy and so incredibly good. Even my meat and taters hubby welcomes a generous helping.

This creamy mashed cauliflower recipe is not only completely delicious, it’s so simple to make. All you need is 3 ingredients, a food processor or blender, and willing participants to enjoy this restaurant worthy side dish.

The Secret To Smooth & Creamy Mashed Cauliflower:

First, it’s important to remove as much of the stems as possible. The stems are more fibrous so they don’t break down as easily. Second, make sure the cauliflower is cooked super soft before you transfer it to the food processor or blender. The results are creamier and smoother. Third, adding a bit of cream cheese gives mashed cauliflower a silky texture. However, if you’re lactose intolerant, leave it out all together and it will still be delicious. Last but not least, make sure you blend the cauliflower until it’s smooth and creamy. This could take up to a couple of minutes depending on the quality of your kitchen tool.

While this 3 ingredient recipe is delicious as is, you can customize it to your liking. Here are a few ingredients you can add to enhance and modify your mashed cauliflower.

  • 2-3 roasted garlic cloves
  • 1/4-1/2 cup parmesan cheese (or use your favorite cheese)
  • 1/4 tsp cayenne pepper
  • Chives, sliced green onions, or fresh herbs (stir in after it’s blended)
  • Bacon bits (add to the top or stir in after it’s blended)

What To Serve With Mashed Cauliflower:

Serve mashed cauliflower with chicken, fish, beef, pork, or add to any vegetarian menu. They are also a great substitute to mashed potatoes or rice in recipes calling for either or. For inspiration, here are a few recipes you can serve with creamy mashed cauliflower.

Ingredients
  

  • 1 head of cauliflower cut in small florets with most of the stems removed, about 4 cups worth
  • 1/2 cup water
  • 2 tbsp butter
  • 2 oz light cream cheese optional
  • 1/2 tsp salt
  • 1/4 tsp pepper

Additional add-ins and toppings

  • 2-3 roasted garlic cloves
  • 1/4-1/2 cup parmesan cheese or any other cheese you like
  • 1/4 tsp cayenne pepper
  • Chopped chives, sliced green onion, or fresh herbs
  • Crispy bacon bits

Instructions
 

  • Add cauliflower florets and water to a large microwavable bowl. Cover with plastic wrap and cook on high for 10 minutes or until soft.
  • Once cauliflower is cooked, drain off liquid and add to a food processor or blender.
  • Add butter, cream cheese, salt & pepper. This is a good time to add additional ingredients like, roasted garlic, additional cheese, and spices.
  • Blend cauliflower about 1 minute. Scrape down the sides and blend another 30 seconds to 1 minute, or until creamy and smooth. Taste for seasonings and serve!
  • After serving you can add additional toppings.
