This year, we're making things a little easier by letting the crockpot handle the heavy lifting. It's such a relief to free up stovetop space for everything else on your holiday list!

Crockpot Mashed Potatoes with Cream Cheese take the flavor and texture of regular mashed potatoes to a whole new level. These are my husbands favorite way to enjoy taters --- ultra-silky, buttery, and rich; the kind of indulgent side dish that turns an everyday meal into something special.

Ingredients For Crockpot Mashed Potatoes

You only need a few simple ingredients and pantry seasonings to make the most delicious mashed taters.

  • Potatoes-Yukon gold make these potatoes extra creamy but russets will also work.
  • Chicken broth- This will help cook the potatoes in the slow cooker.
  • Cream cheese- Make sure it's the good stuff --- full-fat cream cheese.
  • Sour cream adds a slight tang and extra creaminess.
  • Butter- Use salted or unsalted butter.
  • Garlic powder
  • Salt and pepper

  • Prepare potatoes by peeling and dicing into cubes.
  • Assemble in the slow cooker with chicken broth and butter.

Ang's Helpful Tips for The Best Cream Cheese Mashed Potatoes

  • Cut potatoes on the smaller side, about 1 inch cubes, so they cook quicker.
  • Use room temperature cream cheese and sour cream so it blends more smoothly with the potatoes.
  • Remove excess chicken broth from the slow cooker after the potatoes cook. You only want about ¼ cup left in the pot.
  • Don't overwork the potatoes when mashing as it can make them gluey.
  • Season potatoes after the cooking time. The potatoes cook in chicken broth and butter which both have salt. Season to taste after you mash the potatoes.

Can I Make-Ahead Cream Cheese Mashed Potatoes?

Yes! Prepare the mashed potatoes as directed. Cool, then refrigerate in a covered dish 1 day in advance. Reheat in the slow cooker on Low using a splash of milk or cream to refresh the texture.

Do Mashed Potatoes Freeze Well?

I personally do not care for the texture of mashed potatoes once frozen and thawed but it will still work if you want to preserve leftovers. Make sure potatoes are cooled completely, then portion into freezer bags or airtight containers. Freeze up to 2 months. Thaw overnight in the fridge, then reheat in a slow cooker or on the stove with a bit of milk or cream stirred in.

  • 2 qt or larger slow cooker

Ingredients

  • 3 pounds Yukon gold potatoes, peeled and cut in 1 inch cubes or use russets
  • 2 tablespoon butter cut in pieces
  • 1 cup chicken broth, low-sodium
  • 4 ounces cream cheese, room temperature
  • ¼ cup sour cream, room temperature
  • ¼ teaspoon garlic powder or to taste
  • salt and pepper to taste

Instructions

  • Add prepared potatoes to a slow cooker and dot the top with butter and add the chicken broth. Toss together then place the lid on and cook on high for 4 ½ to 5 hours or until potatoes easily pierce with a fork.
  • When potatoes are cooked, make sure to drain all but ¼ cup liquid from the slow cooker, then add in cream cheese, sour cream, and garlic powder. Use a potato masher to mash potatoes until creamy, or use an electric mixer.
  • Season to taste with salt and pepper and it's ready to serve.

Notes

Be mindful about adding salt until the potatoes are mashed and you can taste them. The chicken broth and butter both will season the potatoes with salt while cooking. 
For ultra smooth mashed potatoes use a hand mixer, just be careful not to over-mix otherwise the potatoes may turn out gluey or gummy. 
Potatoes can be cooked on low however it will take several hours.
