We are told to eat the rainbow and boy did my mom take that literally when we were growing up. There was always a gigantic salad at the dinner table, and when I say it was loaded, I mean LOA-DED! No veggie left behind!

This Crunchy Asian Chopped Salad might not be the traditional green salad you’d see at the dinner table, but equally, it’s colorful, fresh, healthy, satisfying, and so delicious. The best part is you can customize with what you have on hand, or bulk it up with more vegetables, nuts, or seeds.

- Veggies- Purple cabbage, carrots, broccoli, edamame, green onion, and cilantro.
- Chicken- I use shredded chicken breast to keep the salad low-calorie and lighter. Any leftover cooked chicken works great.
- Crunchy elements– Toasted sliced almonds and chow Mein noodles.
- Dressing ingredients- Rice vinegar, avocado oil, soy sauce, toasted sesame oil, honey, ground ginger, salt and pepper.
Substitutions and Additions
- Veggies- Other veggies that hold up well in this salad are- zucchini, cauliflower, bell peppers, radishes, shaved brussels sprouts, and celery. Feel free to experiment with items you love.
- Nuts and seeds- This salad is great with cashews, sunflower seeds, sesame seeds, pepitas, and roasted peanuts.
- Add fruit- It’s common to add orange segments or mandarin oranges to an Asian salad. Other fruit that works well in this salad would be apples and pears.
- Fresh herbs- Parsley, mint, and Thai basil.
- Gluten-free option– To make this salad gluten-free simply swap out the soy sauce for coconut aminos and eliminate the chow Mein noodles.

Step One. Add the salad ingredients to a large bowl then combine dressing ingredients in a small bowl or mason jar until well incorporated.


Step Two. Pour all of the dressing over the salad ingredients and use tongs to toss and combine. Top with chow Mein noodles and serve.

- 1/2 cup carrots, shredded
- 1 cup broccoli florets
- 1/2 cup shelled edamame
- 2 green onions, sliced
- 1/3 cup cilantro, chopped
- 1 cup cooked chicken, shredded
- 1/3 cup toasted sliced almonds
- chow Mein noodles to garnish
Dressing Ingredients:
- 1/4 cup rice vinegar or white vinegar
- 1/4 cup avocado or olive oil
- 3 tbsp low sodium soy sauce
- 1/2 tbsp honey
- 1 tsp toasted sesame oil
- 1/2 tsp ground ginger or use 1 tsp fresh ginger
- ground black pepper to taste
Instructions
