If you’re picturing something boring, let me stop you right there. A cucumber tomato sandwich done right is pure summer magic. It’s crunchy, juicy, refreshing, and oddly comforting.
Besides the fresh produce and quality bread, the real secret here is plenty of mayo. You don’t want to skimp on the sauce, it makes it. Even my mayo-hater daughter loves it on this sandwich.
4 Basic Ingredients
One of the things I love most about this sandwich is you only need 4 simple ingredients (not including salt and pepper.) That’s it! No fuss, no fancy extras—just clean, fresh flavors.
- Bread
- Tomatoes
- Cucumbers
- Mayo
- Salt and pepper

Optional Add-Ons
Truly this sandwich needs nothing more than what it is, but you can certainly customize with additional ingredients to make it your own. Try these variations.
- Fresh herbs– Mix fresh fresh basil, chives, or dill right in with the mayo for a pop of fresh herb flavor.
- Oil and vinegar– You’ll need an extra napkin but adding a drizzle of olive oil and red wine vinegar makes this sandwich extra special.

Assembling Cucumber Tomato Sandwich
- Spread a generous layer of mayo on each slice of bread.
- Layer thick slices of tomato (season with salt and pepper) then add a layer of thinly sliced cucumbers, with another touch of salt and pepper.
- Place the other half of the bread slice on top of the cucumbers and gently press down. Slice in half and serve right away.

- Find fresh, quality produce– The tomato and cucumber are the star of the show here so make sure the cucumbers are fresh and crisp, and the tomatoes are juicy and ripe.

Cucumber Tomato Sandwich
Ingredients
- 4 slices bread
- 1 large tomato, sliced I prefer thicker slices
- 1/2 cup sliced cucumbers
- 3-4 tbsp mayo
- salt and pepper to taste
Instructions
- Spread a generous amount of mayo on each bread slice, about 1 tbsp mayo per slice. Layer with 2-3 slices of tomato (depending on how big your bread slices are) season tomatoes with a little salt and pepper, then add a layer of cucumber slices. Season cucumbers with a little salt and pepper and place the other bread slice on top. Cut in half and serve immediately.
