Denver Breakfast Sandwich

If you love a classic Denver omelette with eggs, cheese, green peppers and ham, you’ll love the flavors of this easy Denver Breakfast Sandwich grilled with butter and parmesan. It takes minutes to make and it’s the perfect meal to eat on-the-go.

One of my favorite things to order when we go out to breakfast is a Denver omelette I love it because it’s simple, savory, salty, and cheesy.

What Is A Denver?

A classic Denver (also known as the Western omelette) is ham, green peppers, often times onions, and cheese stuffed in an egg omelet. Something about that combination hits the spot every time.

I thought it would be fun to build these flavors into a hearty breakfast sandwich that’s convenient and easy to take on-the-go. The extra buttery parmesan crust makes these extra cheesy and delicious.

Be prepared because these sandwiches will keep you full and satisfied for hours! This is especially important for folks like me that live for the breakfast hour.

Simple Ingredients:

  • Oil or butter- To cook the eggs.
  • Eggs- I use 4 whole large eggs for this recipe.
  • Bell pepper- Green bell pepper is a classic Denver ingredient.
  • Thick bread- A hearty thick bread like Artesian wheat will hold up well with the ingredients.
  • Deli ham- I use thin black forest deli ham.
  • Provolone cheese- Provolone has a mild flavor and melts nicely.
  • Butter and parmesan- This combination offers a cheesy buttery crust when you grill the sandwiches.
  • Salt and pepper- Use this to season the eggs.

Substitutions And Add-Ins:

  • Eggs- For a little lighter breakfast sandwich use egg whites. Keep in mind you’ll need to add 2-3 more eggs (using egg white only) in addition to the 4 eggs for this recipe.
  • Veggies and herbs- Use any color bell pepper you like. You can also add chopped onion for additional flavor or throw in some fresh herbs like parsley or cilantro.
  • Bread- You’ll want to use a heartier bread. Sourdough or a thicker style French bread would work great.
  • Cheese- Use your favorite cheese. Cheddar, pepper Jack, swiss, or any good melting cheese.

How To Make Denver Breakfast Sandwich:

Step One. Heat a large skillet over medium-low heat. Add a little oil or butter to the skillet and allow to heat. Meanwhile whisk eggs until fluffy. Season with a little salt and pepper and add diced peppers. Pour eggs in the heated skillet and slowly move the eggs around with a spatula until just set.

Step Two. Assemble sandwiches. Place provolone cheese on one bread slice. Top with eggs, then ham, and another cheese slice. Place the other bread on top. Spread butter on the top and underside of each bread slice. Sprinkle grated parmesan cheese over the buttered bread and use your fingers to slightly press the the cheese down so it adheres to the butter.

Step Three. In the same pan used for the eggs set on low-heat, grill sandwiches on both sides until deep golden brown and cheese is melted. Slice in half and serve.

Recipe Tip:

  • đź’ˇLeftover ham- This is a great recipe to use leftover ham from the holidays. Dice ham in small pieces and mix in with the eggs.

Yes! Prepare sandwiches according to the instructions up until the grilling step. Wrap sandwiches in plastic wrap or foil. Place in the refrigerator for up to 3 days. When ready to grill, heat pan to low-heat and grill sandwiches until warmed through and golden brown on the outside.

Yes! This is great especially if you’re feeding more than 2 people. Heat oven to 375℉. Place prepared sandwiches on a sheet pan lined with parchment paper and bake for 10-15 minutes flipping half way through. Bake until golden brown and cheese is melted.

Equipment

  • 1 large non-stick skillet with fitted lid

Ingredients

  • 2 tsp butter or avocado oil
  • 4 large eggs
  • 1/4 cup green bell pepper, finely diced
  • salt and pepper to taste
  • 6 slices black forest deli ham
  • 4 provolone slices
  • 4 thick bread slices
  • 2-3 tbsp softened butter
  • 1/4 cup grated parmesan cheese

Instructions

  • In a small bowl whisk eggs until fluffy. Add green peppers and season lightly with salt and pepper. Set aside.
  • Heat skillet to medium-low heat and add oil or butter. Pour in eggs and allow to set 10-15 seconds. Use a spatula to slowly move and turn eggs. Continue to turn eggs until set and slightly firm. You don't want the eggs too soft or they won't hold up well in the sandwich. Remove from the heat.
  • Lay down 4 slices of bread and place one slice of provolone cheese on two of the slices. Divide the eggs between the two slices of bread with cheese, then lay 3 slices of ham over the top of the eggs. Add one more slice of cheese per sandwich and place the other bread half on top.   • Spread softened butter on the outside of the bread and sprinkle the top with a little parmesan cheese. Using your clean hands or a spoon, gently press the cheese into the butter. Carefully flip the sandwiches and repeat on the other side.
  • Use the same skillet to grill sandwiches. Heat to low heat and grill on first side with the lid on for 3-4 minutes. Turn and grill on second side for an additional 3-4 minutes, or until deep golden brown and cheese is melted. Carefully watch your bread so it doesn't burn. Slice in half and enjoy!
