Even with summer in full swing we still like to throw a cozy meal in the mix every so often. You gotta have your go-to comfort foods and this Dump-And-Bake Pork Chops and Rice recipe will definitely be added to the list. Even if it’s 98° degrees!
The awesome thing about this recipe (other than the wonderful savory flavors) is the ease of putting it all together. We use one large baking dish to mix, assemble, and bake everything to perfection. It’s fast and easy, and I might just pat myself on the back when I can have dinner baking in the oven in 5-minutes or less.
A popular pork chop recipe we make all throughout the year is Grilled Maple Chipotle Pork Chops. This would also be great with a side of rice to sop up the yummy chipotle sauce.
Simple Ingredients:
- Sour cream– Most pork chop rice bakes use cream of mushroom or chicken soup. Here we use sour cream for the creamy component.
- Beef broth– Use a good quality beef broth for the best depth of flavor. Our favorite is Better Than Bouillon Roasted Beef Base.
- Trader Joes seasonings– I use both the umami seasoning blend and onion salt from Trader Joes to season the rice (thanks to my bff Megs for this recommendation). It adds a wonderful earthy flavor.
- White rice– I use long grain rice but you can use jasmine or even basmati.
- Pork chops– My family prefers boneless pork chops but you can also use 1/2 inch thick bone-in chops.
- Onion soup mix– Lipton onion soup mix is used to season the tops of the pork chops.
- Parsley– This is optional but adds a nice pop of color to the recipe.
Recipe Tip:
- Make sure pork chops are at least 1/2 inch in thickness so they cook evenly with the rice. Bone-in pork chops can also be used and add additional flavor.
How To Make Dump-And-Bake Pork Chops and Rice:
Step One. Heat oven to 350℉ degrees and spray a 9×13 inch baking dish with non-stick cooking spray.
Step Two. Add sour cream, beef broth, and trader Joe’s seasonings to prepared baking dish. Use a whisk to combine, than stir in rice. Place the pork chops over the top of the rice mixture and season the top of the chops with onion soup mix.
Step Three. Cover the dish tightly with foil and bake for 1-hour to 1-hour and 30-minutes. Add parsley to the top and serve.
Common Questions:
The texture of the rice in this recipe should be creamier like risotto not light and fluffy.
This is usually do to over-cooking the chops. You’ll want to check your pork chops for doneness at the 1-hour mark. If they have finished cooking before the rice is done, remove them from the baking dish and tent them with foil on a plate. Finish cooking the rice and proceed with the recipe steps.
Swap out the sour cream for a can of cream of mushroom soup or you can use full-fat Greek yogurt. If using the condensed soup mix you’ll want to adjust your seasonings so the rice mixture isn’t too salty.
I have not tested this but in my experience the texture of the meat and rice will not be the same as if it were fresh.

Dump-And-Bake Pork Chops And Rice
Ingredients
- 1 1/4 cups sour cream (full-fat)
- 2 cups beef broth I use better than bouillon beef base
- 1 tsp umami seasoning blend trader Joe's brand
- 1/2 tsp onion salt trader Joe's brand
- 1 cup long-grain white rice
- 4 1/2-inch thick boneless pork chops or use 1/2-inch bone-in pork chops
- 1 (1.9) ounce packet of Lipton onion soup mix
- fresh chopped parsley
Instructions
Preheat oven to 350℉ and spray a 9×13 baking dish with non-stick cooking spray.
- Add sour cream, beef broth, and trader Joe’s seasonings to prepared baking dish. Use a whisk to combine until mostly smooth, than stir in the rice.
- Place the pork chops over the top of the rice mixture and season the top of the chops with onion soup mix. I use about 1/2 of the mix for all 4 chops.
- Cover the dish tightly with foil and bake for 1-hour to 1-hour and 30-minutes. I start checking the rice and the pork chops at the 1-hour mark.
- Once pork chops and rice is cooked, top with parsley and serve.
