As I get older, especially, I have really enjoyed cooking with more Eastern cuisine ingredients. The savory, salty flavors, umami taste, ginger, soy sauce, I love it all!
What I love about these Easy Asian Noodles is the well balanced flavor. It’s not too strong with garlic or other ingredients that can tend to take over the whole dish. Every ingredient has its place and shines in their own way.
This recipe can serve as a simple side dish with grilled chicken or fish. or make it the main meal and add chicken, shrimp, tofu, or more veggies right in with the noodles.
These noodles are so easy to make, you could whip up a batch over the weekend for simple lunches to have during the weekday. Enjoy them warm or cold, they’re just too good!
Simple Ingredients:
- Noodles- I like to use a thicker style noodle like linguine.
- Bell peppers- Preferably red, yellow, or orange bell pepper.
- Aromatics- Green onions and garlic
- Coleslaw mix- This is a great way to add in additional veggies without having to do extra chopping.
- Sauce- Low-sodium soy sauce, oyster sauce, sesame oil, and red pepper flakes.
- Toppings- Honey roasted peanuts, green onion slices, and cilantro.
Substitutions and Add-Ins:
- Noodles- Other noodles you can use for this recipe include spaghetti noodles, rice noodles, ramen, or egg noodles. Make sure to cook the noodles according to the package direction, drain and rinse.
- Veggies- Add other veggies like carrots, broccoli, snap peas, mushrooms, or zucchini. You can definitely get creative and use what you have on hand or what you enjoy.
- Meat- Add cooked chicken, shrimp, or tofu to the noodles for a complete meal.
- Other toppings- Roasted cashews salted peanuts, or toasted sesame seeds.
- Sauce- If you don’t have oyster sauce, hoisin sauce can be used in place of. Soy sauce can be substituted with coconut aminos or tamari.

Step One. Mix sauce ingredients in a small bowl and set aside. Meanwhile heat a large skillet to medium heat and add olive oil and peppers. Cook peppers for a few minutes then add garlic and the white parts of the green onion slices. Sauté until fragrant.
Step Two. Add coleslaw mix and sauté another few minutes then stir in cooked linguine and sauce. Continue to stir and heat noodles and sauce for another couple minutes. Serve and top with honey roasted peanuts, green onion slices, and cilantro.
Tips:
- đź’ˇRinse cooked noodles. Make sure to rinse the noodles after you’ve cooked them to remove the excess starch. This will make it much easier when you add them to the sautĂ© pan.
- đź’ˇDon’t overcook the noodles. Cook noodles just until al dente in the first step. They will soften a bit more when you add them to the pan with the sauce.

Yes! Use your favorite gluten-free noodles. Make sure to thoroughly rinse the noodles as they are higher in starch than regular noodles. Use coconut aminos instead of soy sauce.

Easy Asian Noodles
Equipment
- 1 large non-stick skillet
Ingredients
- 8 ounces linguine noodles, cooked al' dente, drained and rinsed well
- 1 tbsp olive or avocado oil
- 1 small yellow bell pepper, cut in thin strips
- 2 large green onions, sliced, white and green parts divided
- 2 garlic cloves, minced
- 2 cups coleslaw mix
- 1/2 cup chopped cilantro
- 1/3 cup chopped honey roasted peanuts
For The Sauce:
- 1/3 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp toasted sesame oil
- 1 tbsp oyster sauce
- 1/4 tsp crushed red pepper flakes
Instructions
- Cook 8 oz linguine noodles according to package directions for al dente. Drain, rinse well and set aside.
- Mix all the sauce ingredients in a small bowl until combined and set aside. 1/3 cup soy sauce, 2 tbsp honey, 1 tbsp sesame oil, 1 tbsp oyster sauce, 1/4 tsp red pepper flakes.
- Meanwhile in a large skillet heat 1 tbsp olive oil to medium high heat then add 1 small bell pepper. Sauté peppers for 2-3 minutes, then stir in 2 minced garlic cloves, along with the white parts from the 2 sliced green onions. Sauté another 1-minute.
- Next add coleslaw mix and cook stirring constantly for 2-minutes, then add cooked noodles and pour in prepared sauce. Continue to cook for 3-4 minutes making sure to keep the noodles moving in the pan. Use tongs to make it easier.
- When all the ingredients are heated through, serve, and top with 1/2 cup chopped cilantro, 1/3 cup chopped honey roasted peanuts, and the green parts of the green onion slices. Serve warm or cold.
