If you asked my husband what his all time favorite meal I make for him, it’s BBQ chicken pizza. He requests it almost every Father’s day, birthday (if we are around) and all throughout the year.

Our favorite toppings include cheese (obviously) pan seared or grilled chicken, red onions, pineapple chunks, and fresh cilantro to boot! It has the perfect sweet, smoky, savory flavors. Yum!

We recently moved our daughter into her dorm room for her first year of college, so I’ve needed to scale back on the quantity of food I make for dinner.

The nice thing about this BBQ Chicken Pizza recipe is the use of individual store-bought Naan bread. This allows me to make just enough for the two of us and not waste ingredients.

If you adore pizza like we do you have to also try this Breakfast Pizza. This includes a convenient store-brand crust for a fast, delicious meal. This truly can be enjoyed at the start of your day or during supper time.

Simple Ingredients:

  • Chicken- I use one medium size chicken breast.
  • Seasonings- Creole seasoning, oregano, and salt and pepper are used to season the chicken.
  • Olive oil- For cooking the chicken.
  • Naan bread– I like to buy the Trader Joe’s brand but any Indian style flat bread will work.
  • BBQ sauce– Use any brand you love or even homemade.
  • Mozzarella cheese– Take the time to shred the mozzarella for a super cheesy pizza.
  • Red onion– A classic BBQ chicken pizza topping. Just a few slices on top adds great flavor.
  • Pineapple chunks– Use fresh or canned.
  • Cilantro– Adds a pop of freshness after the pizza bakes.

Substitutions:

  • Chicken- We like to use breast meat for our BBQ chicken pizzas but chicken thighs would be great or even a rotisserie from the grocery store for a super fast meal.
  • Pizza crust- You can really get creative with the crust you choose to use. Flat breads, pita bread, English muffins, or even the individual Boboli crust from the grocery store.
  • Cheese- Mozzarella cheese is a classic pizza cheese but Monterey Jack is a good melting cheese for pizza.
  • Other toppings- Change it up with other toppings like black olives, mushrooms, fresh tomatoes, or green bell peppers.

How To Make Easy BBQ Chicken Pizzas:

Step One. Cook your chicken breast. Season both sides of your chicken with creole seasoning, oregano, and a touch of salt and pepper.

Step Two. Heat a small skillet to medium high heat and add olive oil. Once heated add your chicken breast and sear on both sides until deep golden brown and the chicken is cooked through. Transfer to a cutting board and slice.

Step Three. Heat oven to 350℉. Set your Naan bread on a pizza pan or small sheet pan.

Step Four. Layer the pizza. First spread BBQ sauce on crust, then a sprinkle of cheese, next chicken, and finish with onion slices, pineapple chunks, and more cheese. Add another light drizzle of BBQ sauce if desired. Sprinkle the top with dried oregano.

Step Five. Bake in preheated oven for 10-12 minutes or until cheese is melted and crust is crisp around the edges. Top with fresh cilantro and serve.

Recipe Tips:

  • For the chicken- Take the couple extra minutes and pound out your chicken until it’s about 1/4 inch thick. This will not only help it cook quickly but the seasonings will have a chance to infuse into the chicken better.
  • For the crust- For a super crispy crust you can pre-bake for a few minutes before putting on the toppings. This will ensure it’s nice and crispy all over and not just the edges.

Ingredients

  • 1 medium chicken breast, pounded 1/4 inch thin
  • creole seasoning to taste
  • dried oregano to taste
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 3 Naan bread pieces or Indian flat bread see post for image
  • 1/3 cup prepared BBQ sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sliced red onion
  • 1/3 cup pineapple chunks, canned or fresh
  • chopped cilantro for topping

Instructions

  • Season chicken on both sides with creole seasoning, dried oregano, and a touch of salt and pepper.
  • Heat skillet to medium high heat and add olive oil. Once heated add chicken. Sear on both sides until deep golden brown, about 4-5 minutes per side. Chicken is done when the internal temperature reaches 165°. Allow to rest on cutting board for 5-minutes then cut into 1/4 inch slices.

Meanwhile heat oven to 350℉.

  • Place Naan bread on pizza pan and spread 1-2 tablespoons of BBQ sauce in an even layer. Add 2-3 tablespoons of cheese, then layer with sliced chicken, red onion slices, pineapple chunks, and more cheese. Add another drizzle of BBQ sauce and more dried oregano if desired.
  • Bake pizza's for 10-12 minutes or until cheese is melted and the edges of the crust are crisp. Top with fresh cilantro and serve.
