Summer is just beginning so it’s a good time to share my favorite summer salad recipes. This cauliflower salad is a winner every time I make it. It’s crunchy, sweet, and a little bit salty from the parmesan cheese. The lemony dressing adds a burst of flavor, it’s so easy and so good!
Let’s eat!🤍

Notes
Make ahead- This salad can be made a day in advance. Leave off the parmesan cheese until ready to serve.Â
Roast cauliflower- If you don’t like raw cauliflower you can roast the florets in a 400° degree oven for 20 minutes with a little olive oil, salt and pepper. This is soooo good! Let the cauliflower cool before you assemble the salad.Â
