Crunchy cauliflower florets with nuts, dried fruit, sweet cherry tomatoes, parmesan cheese, all dressed up with a lemony vinaigrette. It’s the perfect summer salad for all occasions. Even my hubby who doesn’t care for salad raved about it!

Summer is just beginning so it’s a good time to share my favorite summer salad recipes. This cauliflower salad is a winner every time I make it. It’s crunchy, sweet, and a little bit salty from the parmesan cheese. The lemony dressing adds a burst of flavor, it’s so easy and so good!

Easy Cauliflower Salad

Ingredients

  • 1/2 head cauliflower chopped in small pieces, about 4 cups
  • 1 cup cherry tomatoes, halved
  • 1/2 cup low-sugar craisins use any kind of dried fruit you like
  • 1/4 cup toasted sliced almonds
  • 2 tbsp sunflower seeds
  • 1/4 cup shredded parmesan cheese

Lemon Vinaigrette

  • 1/4 cup avocado or olive oil
  • 1/2 lemon, zested
  • Juice of one lemon
  • 1 tbsp Dijon mustard
  • 1-2 tsp honey
  • 2 tbsp shallot or red onion, minced
  • 1 tbsp red wine vinegar
  • salt and pepper to taste

Instructions

Vinaigrette

  • Add all ingredients to a small bowl or mason jar. Whisk or shake until well combined and thickened.

Assemble salad

  • Add cauliflower florets to a medium size bowl. Top with tomatoes, nuts, and dried fruit. Pour the vinaigrette over the salad and toss to coat. Transfer to a serving plate or wide bowl and sprinkle with parmesan cheese.

Notes

Make ahead- This salad can be made a day in advance. Leave off the parmesan cheese until ready to serve. 
Roast cauliflower- If you don’t like raw cauliflower you can roast the florets in a 400° degree oven for 20 minutes with a little olive oil, salt and pepper. This is soooo good! Let the cauliflower cool before you assemble the salad.
