I've made and tweaked this dressing too many times to count to find the perfect balance of tang, sweetness, and rich flavor. I love that you don't need anything special---just a few items from your pantry and literally 5-minutes of your time. It lasts several days in the refrigerator so you always have a delicious quality dressing to toss with your favorite greens, wraps, or drizzle over roasted veggies. Yum!

Simple Ingredients

  • Spring greens, or your favorite lettuce.
  • Avocado oil or olive oil.
  • Red wine vinegar- I feel this has the best flavor balance but you could also use white wine, rice wine vinegar, or white balsamic.
  • Dijon mustard for a subtle tang.
  • Shallots offer a perfect balance between garlic and onion. You can also use red or a white sweet onion.
  • Maple syrup has rich nutty flavor but honey works as well.
  • Soy sauce- A little goes a long way and adds a nice depth of flavor.
  • Salt and pepper to taste.

Simple One-Step Easy Vinaigrette

  • Add all the vinaigrette ingredients to a mixing bowl and combine with a whisk until emulsified, thick and creamy. Store in the refrigerator in a sealed container until ready to use.

Mix it up with these Variations

  • Use lemon juice instead of vinegar for a citrus twist.
  • Add fresh herbs like basil, parsley, or thyme for an herby flavor.
  • Toss in minced garlic if you love a garlicky vinaigrette.

  3. Grain Bowls like quinoa or couscous with roasted chicken. This is one of my favs!
  4. Sandwiches & Wraps--also a fav.
  5. Tomatoes and mozzarella for a pop of flavor.

Ingredients

  • 6 tablespoon avocado or olive oil
  • 2 ½ tablespoon red wine vinegar
  • 2 teaspoon Dijon mustard
  • 2 teaspoon pure maple syrup or honey not pancake syrup
  • 1 tablespoon shallots, minced
  • ½ teaspoon low-sodium soy sauce
  • salt and pepper to taste

Instructions

  • Add all the ingredients to a mixing bowl and use a whisk to combine until the vinaigrette is thickened and creamy. Taste for salt and pepper then store in the refrigerator in a sealed container until ready to use.
