Let’s be honest, some nights we just don’t have the energy for complicated meals. That’s where these ranch chicken tacos come in. These literally take minutes to whip up thanks to a store-bought rotisserie chicken, but truly the secret to these fantastic tacos is the quick homemade ranch sauce. It’s creamy, tangy, and a combination you’ll contemplate putting on everything.

Plus, who doesn’t appreciate a meal on the table in under 30-minutes. And hello…tacos? Need I say more? This will be the kind of dinner you’ll look forward to for ease and taste.

The Main Ingredients

These ingredients can vary depending on what you have on hand and what you love. Tacos as we know it are super versatile so have fun with your fresh toppings, tortillas, and cheese selection.

Ingredients for ranch chicken tacos. Cooked rotisserie chicken, corn tortillas, taco seasoning, sour cream tomatoes, salsa, water, ranch dressing, green onions, lettuce, cheese, cilantro.
  • Cooked chicken– We use a rotisserie to keep this easy and skip needing to cook anything ahead of time. Plus, rotisserie chicken has great flavor.
  • Tortillas– Use what you love–even gluten and low-carb work great. We chose corn tortillas simply because we enjoy the flavor.
  • Taco seasoning– Use homemade or a packet of low-sodium to control the salt.
  • Ranch sauce– Ranch dressing (use my homemade mix to make your own, or store-bought) sour cream, and salsa.
  • Suggested toppings- Cheese, tomatoes, lettuce, green onions, and cilantro.

Putting Together Chicken Tacos

  1. Make your ranch sauce by combining all sauce ingredients in a small bowl. Place in the refrigerator until it’s time to serve.
  2. Combine cooked chicken with taco seasoning and water in a bowl. Heat gently in the microwave until warmed through.
  3. Heat tortillas in a hot, dry skillet until pliable and slightly toasted. Keep secure in foil to maintain their heat.
  4. Build tacos by adding a layer of chicken in the center of your tortilla, top with cheese, tomatoes, lettuce, and a generous drizzle of ranch sauce, then top with green onions and cilantro.

Ingredients

Ranch Sauce

  • 1/2 cup prepared ranch dressing
  • 1/4 cup sour cream
  • 2 tbsp salsa

Chicken

  • 2 cups cooked shredded chicken use a rotisserie for ease
  • 2 tbsp taco seasoning preferably low-sodium
  • 1 tbsp water

Toppings

  • 1 cup shredded Colby Jack cheese or your favorite Mexican blend
  • diced tomatoes
  • shredded lettuce
  • green onion slices
  • chopped cilantro

Remaining Ingredients

  • 8 (6 inch) corn tortillas

Instructions

  • In a small bowl combine ranch dressing sour cream and salsa. Place in the refrigerator while you prepare the rest of the ingredients.
  • Prepare toppings like lettuce, tomatoes, green onions, and shred Colby Jack cheese. Set aside until ready to use.
  • In a medium bowl combine shredded chicken, taco seasoning, and water. Place in the microwave, covered, and heat gently until warmed through.
  • Meanwhile heat a small skillet to medium high heat and toast corn tortillas in dry skillet, about 30-seconds per side. Wrap in foil to keep warm.
  • Assemble tacos with a layer of chicken, 1 tbsp or so of cheese, a thin layer of lettuce, a few diced tomatoes, some of the ranch sauce, and finally garnish with green onion slices and chopped cilantro. Enjoy right away.

Notes

More topping ideas include avocado or guac, sliced black olives, or jalapeno slices.
Ranch sauce will keep in the refrigerator in an airtight container for up to 5 days.
