Delicious Egg Roll Flavor Without The Wrapper

If you enjoy the flavors of egg rolls but want something lighter and cozier, Egg Roll Soup is the perfect standby. It’s savory, gingery, and garlicky, with plenty of veggies and lean ground turkey to fill you up. It’s also naturally low-carb, so it won’t leave you feeling bloated or weighed down after dinner.

This soup was a wonderful way to reset with a healthy, comforting meal, especially after the holidays when my self-control was… questionable 😬. It makes a generous batch, so we were able to enjoy it for several days, which is always a win.

Another reason we love this recipe is how practical it is. It’s freezer-friendly, family-friendly, and incredibly easy to customize based on what you have on hand or who you’re serving. Swap the protein, load up the veggies, or let everyone top their bowl their own way. This soup works for just about everyone.

Ingredients You Need

Keep in mind the veggies and protein listed below are just a suggestion. Feel free to play with those items as you see fit.

  • Avocado or olive oil for cooking the ground meat.
  • Lean ground turkey– Traditionally, egg rolls are made with ground pork but I prefer the lighter option here with turkey. It still offers great flavor and high protein.
  • Aromatics– Onion, garlic, and fresh ginger are truly the foundation for this great soup.
  • Veggies- Carrots, Shiitake mushrooms, and cabbage
  • Chicken broth– Make sure it’s low-sodium.
  • Soy sauce– Low sodium soy sauce or use tamari to make this soup completely Gluten Free.
  • Sesame oil– I use un-toasted as toasted sesame oil can be a bit overpowering in this soup.
  • Rice vinegar will balance out the flavors.
  • Umami seasoning- This is a mushroom seasoning blend that adds depth of flavor. I find mine at Trader Joes but you can also find it off amazon here.
  • Salt and pepper to taste although I did not need to use any.
  • Egg to swirl in the soup. (optional but adds nice texture and extra protein)
  • Toppings: Green onions, cilantro, and chili onion crunch

How To Make Egg Roll Soup with Ground Turkey

  • Cook ground turkey with avocado oil until no longer pink, then stir in onions, garlic, and fresh ginger.
  • Next add in umami seasoning blend, soy sauce, sesame oil, rice vinegar, chicken stock, carrots, and mushrooms. Bring to a simmer and add in cabbage. Cook for 15 minutes.
  • Once carrots and cabbage are softened, beat eggs in a small bowl and while the soup is still simmering, drizzle in the egg but don’t stir. Allow the eggs to cook 30 seconds then stir with a spoon.
  • Ladle soup into bowls and top with fresh green onions, cilantro, and chili crunch for a touch of heat.

My favorite part about this soup is the addition of the egg. It not only adds another layer of texture, but also helps bulk the soup up and provides an extra boost of protein. As the egg gently cooks into the broth, it creates soft, silky ribbons that make each bite more satisfying. Plus, it gives the soup a beautiful, inviting look that makes it feel extra cozy and comforting.

Ang’s Helpful Tips

  • Have all the ingredients prepped and sauces measured out before you start. The steps come together fast and you want to be ready with each ingredient.
  • Slice carrots thin: Shredded or thinly slice carrots to ensure they cook in the 15 minute simmering time.
  • Don’t overcook the cabbage: Keep it slightly tender-crisp for the best texture.
  • Taste before serving: You’ll want to taste the broth to make sure you don’t need any salt, although, I did not need any salt or pepper.
  • Add toppings last: Fresh herbs and chili crunch shine best when added just before serving.

Ingredients

  • 1 tbsp avocado or olive oil
  • 1 pound lean ground turkey
  • 1 small yellow onion diced
  • 2-3 garlic cloves, minced
  • 2 tbsp fresh ginger, minced or grated
  • 1/2 tsp umami seasoning blend mushroom seasoning
  • 1 tbsp soy sauce, low sodium
  • 2 tsp sesame oil preferably not toasted
  • 1 tbsp rice vinegar or white vinegar
  • 6 cups chicken broth, low sodium
  • 1 cup carrots, cut in thin strips or shredded
  • 6 ounces shiitake mushrooms, roughly chopped or use cremini or baby Bella
  • 4 cups green cabbage, chopped
  • 2 eggs, lightly beaten optional
  • salt and pepper to taste

Toppings

  • sliced green onions
  • chopped cilantro
  • chili crunch Trader Joes chili onion crunch works great
  • lime wedges

Instructions

  • Heat a large soup pot with 1 tbsp avocado or olive oil to medium heat. Cook and crumble ground turkey until no longer pink. If there is liquid in the pot that is totally fine. NOTE: If using a higher fat ground meat, make sure to remove excess grease.
  • Stir in onions, garlic, and ginger. Cook 2-3 minutes.
  • Next add umami seasoning blend, soy sauce, sesame oil, vinegar, chicken broth, carrots, and mushrooms. Turn the heat up to medium high to bring it to a medium boil and stir in cabbage. Turn heat down to medium low to simmer and cook carrots and cabbage for 12-15 minutes, or until carrots and cabbage are tender. Mine took 12 minutes.
  • While soup is simmering, drizzle beaten eggs in a circular motion then allow to cook for 30-seconds-1-minute without stirring. When the top of the eggs look set, gently stir to combine. Taste for seasoning. You may need salt depending on your ingredients but mine did not need any salt.
  • Ladle soup into serving bowls and top with desired toppings. We love sliced green onions, cilantro, and chili crunch for a touch of heat.

Notes

Make sure to add salt at the very end after tasting. Depending on which protein you use along with the sauces and broth can be salty enough. 
Freeze egg roll soup for up to 3 months. I like to portion into individual containers for easy reheating and simple lunch packing.
Feel free to swap out the ground turkey for pork, chicken, beef, or tofu.

    Literally just got done licking my bowl clean 😋 So good! I saw this recipe posted on instagram and knew I had to make it! I love a good egg roll in a bowl and this hit the mark. I felt like each bite was a different flavor profile and I loved that! It was quick especially if you pre chop everything and have it ready to drop in. And I am a toppings girl! I loved the lime and chili crunch I added some bean sprouts as well for a crunch. I would definitely make this again.
