This Farmer’s Casserole is the ultimate meat lover’s breakfast casserole; similar to my Hashbrown Breakfast Casserole, only a bit heartier. It has all the components of a classic, hearty breakfast and is perfect for a lazy weekend brunch or the holidays.
You’ll love how easily this dish comes together! It’s simple to customize with your favorite breakfast meats, cheeses, and veggies, so you can make it exactly how your family likes it. Best of all, this casserole can be made a day in advance, but you don’t have to. It can also be assembled and baked right away if you’re like me and need something delicious at the last minute.

Basic Ingredients For Farmer’s Breakfast Casserole
- Eggs– You’ll need 8 large eggs for this recipe.
- Hash browns- This can be frozen cubed or shredded hash browns.
- Meat- Sausage, ham, and bacon
- Milk
- Bell peppers such as red and green.
- Cheese- Sharp cheddar is excellent in this casserole or use your favorite cheese blend.
- Green onions
- Seasoned salt and black pepper

Easy Steps — How To Make Farmer’s Breakfast Casserole
Heat oven and prep pan-Preheat your oven to 350℉ and spray a baking dish with non-stick spray.
Prepare meat and eggs– Cook breakfast meat like sausage and bacon then set aside. While the meat cooks whisk eggs, milk, and seasonings in a bowl.


Layer casserole- Spread hash browns in the bottom of your pan, add cooked breakfast meat and peppers, then pour in egg mixture and top with cheese and cooked bacon.


Bake and serve- Place casserole in the oven to bake for 40-45 minutes until eggs are set and cooked through. Garnish with green onion slices and serve.

Variations To Try
- Vegetarian: Skip the meat and add cooked spinach, mushrooms, zucchini and diced tomatoes.
- Taco inspired: Add diced green chilies, pepper jack cheese, and a sprinkle of taco seasoning.
- Healthy Option: Use turkey sausage and reduced-fat cheese.
Make Ahead & Freezer Instructions
Make ahead by assembling the casserole the night before (without baking) cover and refrigerate overnight. In the morning bake as directed in the recipe instructions. You may need to bake a touch longer.
To freeze, assemble the casserole unbaked, wrap tightly with foil, and freeze for up to 2 months. Thaw overnight in the fridge before baking. You can also portion out cooked casserole in individual servings and freeze for a quick breakfast later.

Farmer’s Breakfast Casserole
Equipment
- medium bowl
- 9×13-inch baking dish
Ingredients
- 4 cups frozen cubed or shredded hash browns, thawed unless preparing casserole overnight
- 8 large eggs
- 1 cup milk I use 2%
- 1/2 tsp seasoned salt or kosher salt
- 1/2 tsp black pepper
- 1/2 cup breakfast sausage, cooked and crumbled, about 1/4 pound
- 1/2 cup ham, diced
- 4 slices bacon, cooked crisp and crumbled
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/4 cup green onion slices
Instructions
Preheat oven to 350℉ and grease a 9×13-inch baking dish with cooking spray.
- Cook the breakfast sausage and bacon, then set aside until ready to use.
- In a bowl whisk eggs, milk, seasoned salt, and black pepper. Set aside.
- Layer thawed hash browns in the bottom of your prepared baking dish. Next layer cooked sausage, ham, and bell peppers. Do not stir together. Pour over the egg mixture then top with cheese and cooked bacon pieces.
- Bake uncovered for 40-45 minutes or until eggs are set and cooked through. You can check by inserting a toothpick in the center and if it comes out clean, it's ready to go. Top with green onion slices and serve.
