Eggs are a BIG part of my everyday diet. I love them scrambled, fried, poached, hard boiled, deviled, you name it! They are versatile and some of my favorite ways to enjoy them is over simple toast with avocado, wrapped in a whole grain tortilla with a little cheese, or sandwiched between a crisp English muffin with spinach and turkey bacon.

I. Love. Eggs.

If you’ve spent anytime on social media, you have probably noticed the big cottage cheese trend. Folks are coming up with all kinds of unique ideas to incorporate cottage cheese in their diet for a healthy protein boost. Some of the ways include, baking, sauces, dips, pancakes, smoothies, and eggs, like these Fluffy Cottage Cheese Eggs.

I think cottage cheese was a brilliant addition to eggs in offering more nutrition and enhancing that fluffy, creamy scrambled egg experience we all want to have.

These eggs are super versatile. Enhance the flavor with your favorite seasonings and herbs, cheddar cheese if you’re feeling extra, or even dash on your favorite hot sauce for a little zip.

You’ll also be glad to know that cottage cheese eggs make a great meal prep item. Like my Mini Italian Egg Bites, or my Sausage and Cheese Egg Muffins. They reheat perfectly and taste fresh and delicious, as if you made them that same day!

4-Simple Ingredients:

Ingredients for fluffy cottage cheese eggs. Eggs, low-fat cottage cheese, avocado oil, salt and pepper.
  • Oil- Use oil or butter. I like to use avocado oil as it has monosaturated fats which are considered heart healthy.
  • Eggs- Use large eggs if possible.
  • Cottage cheese- I use low-fat cottage cheese which is slightly higher in protein than full-fat cottage cheese.
  • Seasonings- Salt, pepper, dried parsley

Substitutions and Add-Ins:

  • Cottage cheese- For a cottage cheese substitute that will still lend a fair amount of protein, use ricotta cheese. This will be slightly creamier and melt into the eggs once cooked. You could also use plain Greek yogurt (not fat-free) just keep in mind you’ll want to use less as it will be much tangier than cottage cheese.
  • Seasonings- Boost the flavor of your eggs by adding your favorite seasonings and herbs. All-purpose season salt, garlic powder, paprika, cayenne pepper, oregano, basil, thyme, etc..
  • Veggies- When I’m really feeling healthy I love adding a handful of baby spinach, sliced zucchini, or sliced mushrooms. Make sure to pre-cook the veggies first so there isn’t extra liquid in the eggs.

How To Make Fluffy Cottage Cheese Eggs:

Step One. Heat a medium non-stick skillet to medium-low heat and add oil. While that is heating, use a whisk to combine eggs, cottage cheese, salt and pepper. Pour egg mixture into skillet.

Step Two. Use a spatula to slowly move and fold eggs around the pan as they cook until eggs are just set. Remove from the heat and garnish with parsley if desired.

Important Tips:

While scrambled eggs seem easy enough to make, there are some important tips that make “just okay scrambled eggs into great scrambled eggs”.

  • đź’ˇWhisking eggs- For light and fluffy eggs make sure to whisk eggs for several seconds. Whisk until you see a light foam or bubbles on the top layer of the eggs.
  • đź’ˇUse a nonstick pan- I have made eggs in many different pans but I find a non-stick pan helps lend the fluffiest scrambled eggs. When you have a good nonstick pan it is easier to move and fold the eggs without sticking and creates a lighter, and fluffier scrambled egg.
  • đź’ˇLow heat- Make sure your heat is set to medium low or even low depending on your stove type. If the pan is too hot it will scorch the eggs making them dry and tough. Your end goal is soft, pillowy eggs.

Yes! Unless you have an allergy to eggs or you’ve been put on a strict low-cholesterol diet, eggs have many health benefits which make them an ideal food to eat everyday. No. There is no difference in nutritional value or taste depending on the eggshell color. Brown and white eggs come from different breeds of chickens. Brown eggs can be higher in cost because they are often larger in size.

  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • dried or fresh parsley to garnish

Instructions

  • Heat a medium non-stick skillet to medium-low heat and add 1/2 tbsp avocado oil.
  • While the pan and oil is heating, use a whisk to combine 4 eggs, 1/3 cup cottage cheese, 1/4 tsp each salt and pepper. Pour egg mixture into heated skillet.
  • Use a spatula to slowly move and fold eggs around the pan as they cook until eggs are just set, being careful not to overcook them. They should look soft and fluffy with no raw egg liquid present. Remove pan from the heat and garnish with parsley if desired. Serve immediately.
