Easy, Fresh Pineapple Salsa Recipe

You don’t need fancy ingredients or tons of time. Here’s what we use..

Fresh Pineapple– If you can’t find fresh pineapple or it’s not in-season, you can use a quality can of pineapple tid-bits.

Red onion and bell peppers– These veggies offer a nice crunch that balances the sweet and tart flavor of the pineapple.

Jalapenos– We use pickled jalapenos but you can also use fresh.

Cilantro- If you don’t like cilantro you can use parsley.

Dressing- Olive oil, lime juice, agave or honey, salt, cumin, and chili powder.

  • Make the dressing– Add all the dressing ingredients to a jar with fitted lid and shake until combined.
  • Prepare fruit and veggies– Cut pineapple in small pieces and dice peppers, onions, and jalapenos, then chop cilantro.
  • Assemble salsa– Add pineapple, veggies, and cilantro to a medium bowl. Pour on dressing and toss to coat. It’s ready to enjoy!

  • 1 small mason jar with fitted lid or small bowl
  • 1 medium mixing bowl

Ingredients

Salsa

  • 3 cups fresh pineapple diced in small pieces
  • 1/2 cup green bell pepper, diced small
  • 1/2 cup red bell pepper, diced small
  • 1/3 cup red onion, diced fine
  • 2 tbsp pickled jalapenos, roughly chopped or use a small fresh jalapeno, seeds removed and diced fine
  • 1/3 cup cilantro, roughly chopped

Dressing

  • 1 tbsp olive oil
  • 1/4 cup lime juice
  • 2 tsp agave or honey
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder

Instructions

  • In a small mason jar add 1 tbsp olive oil, 1/4 cup lime juice, 2 tsp agave or honey, and 1/2 tsp each kosher salt, ground cumin, and chili powder. Place the lid on and shake until combined. Or use a bowl and whisk.
  • In a medium bowl add 3 cups pineapple, 1/2 cup each green and red bell pepper, 1/3 cup red onion, 2 tbsp pickled jalapenos, and 1/3 cup cilantro. Add all the dressing and toss to coat. If you have time, chill for 30-minutes before serving.

Notes

🍍To keep your pineapple from turning brown, make sure to toss the ingredients with the dressing right away. The lime juice has citric acid and acts as an antioxidant and helps slow down the enzymatic browning process.
🥡Pineapple salsa will last 4-5 days in a sealed container in the refrigerator.
