I have been busy stocking my refrigerator with snacks to have on hand when I need a pick-me-up but want the option for something healthy. It makes me so happy when I open my fridge and see a weeks worth of ready-made snacks.

Frozen Yogurt Fruit Bark might taste like a creamy, dreamy treat, but it also comes with a variety of health benefits, making it the perfect mid-morning or afternoon snack.
Yogurt bark is great because you can easily customize it with your favorite fruits, nuts, or granola. I can whip up a batch the night before in about 10-minutes and have it ready to enjoy the next morning.

- Plain Greek Yogurt- I find that Greek yogurt is the best option for fruit bark because it freezes really well and it’s super creamy when enjoyed frozen, however you can use any flavored yogurt you like.
- Honey- I like to use honey for my sweetener. Pure maple syrup or even agave will also work. Keep in mind every sweetener is not the same so start with a little and add more as needed.
- Vanilla- Pure vanilla extract gives the yogurt a warm vanilla flavor. You can also use vanilla bean or paste.
- Lemon juice- Balances the flavor of the tart yogurt and sweet fruit.
- Nuts– I use unsalted toasted sliced almonds for added crunch.
- Fresh fruit– Fresh strawberries and grapes.
Variations
- Choose your fruit- Use any combination of fruit like blueberries, raspberries, black berries, mangos, kiwi, or pineapple.

- Step One. Combine the yogurt, honey, vanilla, and lemon juice in a small bowl.
- Step Two. Spread mixture in an even layer on a large sheet pan lined with parchment paper.
- Step Three. Top with fruit and nuts, then place in the freezer for at least 3 hours or until set and firm.
- Step Four. Break fruit bark or slice into squares.

- đź’ˇMake sure fruit isn’t too big or thick. This bark works best if your fruit pieces are not too big or thick. It will make it much easier to slice and eat.
- đź’ˇAllow plenty of time to freeze. Depending on how thick you spread out your yogurt will determine how long it takes to freeze. You want it to be completely solid and firm before breaking or slicing into pieces.
- đź’ˇStoring yogurt bark. Store pieces of yogurt bark in a sealed container in the freezer.
- đź’ˇEnjoy right away from the freezer. You’ll want to enjoy the yogurt bark immediately after removing from the freezer as it does thaw quickly.

Frozen Yogurt Fruit Bark
Equipment
- 1 small bowl
- 1 half sheet pan
- parchment paper
Ingredients
- 2 cups plain, full-fat Greek yogurt
- 1/4 cup honey, or to taste
- 1/2 tsp pure vanilla extract
- 1/2 small lemon, juiced
- 1/2 cup sliced strawberries
- 1/2 cup sliced green grapes
- 1/4 cup toasted, unsalted almond slices
Instructions
Cover a large sheet pan with parchment paper and set aside.
- In a small bowl combine yogurt, honey, vanilla, and lemon juice until creamy.2 cups Greek yogurt1/4 cup honey1/2 tsp vanilla extract1/2 small lemon juiced
- Use the back of a spoon to spread yogurt mixture out into a rectangle on your prepared sheet pan with parchment paper, about an 1/8 inch thick. It doesn't have to be perfect.
- Top yogurt with strawberry and grape slices, then sprinkle almonds evenly over the top. 1/2 cup sliced strawberries1/2 cup sliced green grapes1/4 cup toasted almond slices.
- Place the pan in the freezer and freeze for 3-4 hours or until firm and set. You should be able to break pieces off with your hand.
