There is nothing better on a hot summer day than a big bowl of fresh fruit salad. Especially when berries are in season, the flavors are even better! This fruit salad uses all my favorite fruits but you can certainly add what you love or what is in season. The honey lime mint dressing is refreshing giving each bite a burst of flavor.
We are super blessed to live in a state that offers a bounty of fresh fruits and veggies during the summer months. Oregon is known for their exceptional produce, when in-season, and we take well advantage of it every year.

Simple Ingredients:
- Fresh fruit– Use in-season fruit. For this recipe we chose pineapple, strawberries, blueberries, grapes, and blackberries
- Dressing ingredients– fresh mint or basil, lime zest, lime juice, and honey.

Fresh fruit salad is awesome for summertime cookouts, potlucks, brunch, or having on hand for a quick and refreshing snack.
How To assemble Fruit Salad with Honey Lime Mint Dressing:
Step One. Add all the dressing ingredients to a small mason jar with a fitted lid and shake until combined.
Step Two. In a wide bowl add fresh fruit than pour over dressing. Toss gently with a large spoon to coat the fruit.

Bananas will become mushy and turn brown if not consumed right away. For this reason they are not ideal for fruit salad.
Yes! For best freshness this fruit salad can be made up to five hours ahead of time.
Fruit salad tastes best within two days but will last up to five days.
Store fruit in an airtight container in the refrigerator. You can also place a paper towel over the top of the fruit to help absorb any moisture.

- 2 cups fresh pineapple chunks
- 2 cups fresh strawberries
- 2 cups fresh blueberries
- 2 cups grapes
- 2 cups fresh blackberries
Honey Lime Dressing:
- 2 tbsp fresh mint or basil
- 1 medium lime zested
- 3-4 tbsp lime juice, about 2 limes
- 2 tbsp honey
