Burrito bowls are a staple weeknight meal in our home. They are fast and easy to make, always delicious, and the combinations are endless. Sometimes we do simple rice and beans, and other times our favorite slow cooker chicken bowls. Most often the yummiest bowls are ones that we just throw together using leftover meat and whatever else we have in the fridge that needs to get used up. Burrito bowls are just awesome!
Today I’m sharing a super fun way to enjoy burrito bowls that makes serving even easier and cleanup faster. Ground Beef Burrito Bowl Bake is basically one big bowl in casserole form. A simple layer of whole grain cilantro lime rice, taco meat, beans, corn, cheese, and of course all those awesome burrito bowl toppings. The bonus here is the jalapeno cilantro cream sauce that you’ll practically want to drink with a straw.
Time Saver Ingredients:
Burrito bowls in general have very simple ingredients it’s just a matter of preparing them. One way I save a little extra time with this Ground Beef Burrito Bowl Bake is by using a packet of Uncle Ben’s ready rice from the grocery store. Not only do I save myself an extra dish to wash but I save myself the time it takes to wait for it to cook.
There are other convenient ingredients like canned beans and corn, and pre-shredded cheese (although I did grate my own for this recipe, You could practically have this meal assembled and in the oven in minutes!
Ingredients:
- Ben’s original whole grain brown rice (or leftover cooked rice)
- Cilantro
- Lime juice
- Lean ground beef
- Taco seasoning
- Mexican corn
- Black beans
- Colby Jack cheese
Additional toppings:
- Tomatoes
- Red onion
- Lettuce
- Fresh avocado
Optional (but highly recommended) Jalapeno Cilantro Cream Sauce:
- Sour cream
- Fresh jalapeno
- Lime juice
- Cilantro
- Cumin
- Salt

How To Make Ground Beef Burrito Bowl Bake:
Step 1. Cook the ground beef in a skillet until no longer pink then add taco seasoning and water. Cook for a few minutes and remove from the heat.
Step 2. In a 9×13 inch baking dish add cooked rice, cilantro, and lime juice. Stir to combine and smooth out in a single layer. Sprinkle on some cheese, then layer with ground beef, corn, black beans, and more cheese.




Step 3. Cover the pan with foil and bake for 25-minutes. Remove the foil and bake another 5-minutes.
Step 4. While the the casserole is in the oven make the dressing. Add all the dressing ingredients to a blender or small food processor and blend until mostly smooth. Serve the dressing with the burrito toppings and let everyone add what they love!

My favorite thing to serve along side any burrito bowl is a big bag of toasted tortilla chips. You could also set out warmed flour or corn tortillas for easy soft tacos, or maybe you want something a little lighter like mini peppers for scooping the filling.

This is a great recipe for sharing on a meal train or someone in need. Assemble the casserole in a disposable container and secure it tightly with foil. Write out the baking directions and pack additional toppings and dressing. So easy and everyone will love it!

Ingredients
Layered Burrito Bake:
- 2 8.8 ounce bags Ben's whole grain ready rice, or 3 1/2 cups cooked rice
- 1/2 cup chopped cilantro
- 1 small lime, juiced
- 1 pound lean ground beef
- 1 packet, low sodium taco seasoning
- 1/4 cup water
- 1 (11) ounce can Mexican corn
- 1 (15) ounce can black beans, drained not rinsed
- 1 cup shredded Colby Jack cheese, divided
Jalapeno Cilantro Cream Sauce
- 1/2 cup sour cream
- 1 Jalapeno, seeded and roughly chopped
- 1/2 lime, juiced
- 1/3 cup cilantro
- 1/2 tsp salt
- 1/2 tsp ground cumin
Burrito Bowl Toppings:
- chopped tomatoes
- shredded lettuce
- diced red onion
- fresh avocado, diced
Instructions
Heat oven to 350℉.
- Cook the ground beef in a skillet over medium heat until no longer pink. Remove any excess grease. Add taco seasoning and toast for 1-minute, then stir in water. Cook another 1-2 minutes until meat mixture is thickened and most of the liquid has evaporated.
- Meanwhile, cook rice in the microwave according to the package directions. Add both packets of rice to a 9×13 inch baking dish sprayed with cooking spray. Stir in cilantro and lime juice. Smooth rice to form a single layer.
- Next sprinkle 1/2 cup cheese evenly over the rice followed by the ground beef, corn, black beans, and remaining 1/2 cup cheese. Don't stir the ingredients together. Cover the pan with foil and bake for 25-minutes. Remove the foil and bake another 5-minutes.
- While the the casserole is in the oven make the dressing. Add all the dressing ingredients to a blender or small food processor and blend until mostly smooth.
- Once casserole is baked top with your favorite toppings and serve with cilantro cream sauce.
