  • Ground Beef- We use lean ground beef for a lighter meal.
  • Long-grain white rice- This could be Basmati, Jasmine, or traditional long-grain white rice.
  • Beef broth
  • Onions and garlic
  • Frozen veggies- Such as peas and carrots or use an assortment of veggies.
  • Worcestershire sauce- Adds depth of flavor.
  • Seasonings- Salt, pepper, onion powder, Italian seasoning
  • Cheese- Swiss, cheddar, or your favorite melting cheese.

  1. Preheat oven to 350℉ and spray a casserole dish with non-stick spray.
  2. Caramelize onions in a large skillet with olive oil, about 5-7 minutes.
  3. Brown ground beef then add garlic and cook until fragrant.
  4. Add frozen veggies and seasonings and cook another couple minutes.
  5. Combine with rice, Worcestershire sauce, and beef broth.
  6. Transfer to a baking dish and cover tightly with foil or fitted lid.
  7. Bake for 30-minutes, then top with shredded cheese. Bake uncovered for another 10-15 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 lb lean ground beef
  • 1-2 garlic cloves, minced
  • 1 cup frozen veggies, such as peas and carrots
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 cup shredded cheese, such as swiss or cheddar
  • fresh or dried parsley to garnish

Instructions

Preheat oven to 350℉ and grease a 9×13-inch casserole dish (or 3 Qt) with non-stick cooking spray.

  • Heat a large skillet to medium heat and add 1 tablespoon olive oil and 1 medium onion, diced. Cook onions until caramelized, stirring every couple minutes for about 5-7 minutes. You want the onions to be golden brown and have a sweet, nutty taste.
  • Add 1 pound ground beef to the caramelized onions. Crumble and cook until no longer pink, then stir in 1-2 garlic cloves, minced. Cook another 30-seconds until fragrant.
  • To the cooked ground beef, stir in 1 cup frozen veggies, ½ teaspoon onion powder, 1 tsp Italian seasoning, ½ tsp salt, ½ tsp pepper, and 2 tsp Worcestershire sauce. Cook for 2 minutes just to thaw veggies.
  • Next stir in 1 cup long-grain white rice and 2 cups beef broth. Transfer to your prepared baking dish and cover tightly with foil or a fitted lid. Place in the oven to bake for 30-minutes. Remove the foil and top with 1 cup shredded cheese and bake uncovered for another 10-15 minutes, or until cheese is fully melted and rice is tender.
  • Garnish the top with fresh or dried parsley and allow to rest for 5-minutes before serving.

Notes

Make sure to use long-grain rice for this recipe. Instant rice will not work, and if using brown rice, you'll need to cook it longer and possibly more liquid. 
Storing ground beef rice casserole
  • Store in an airtight container for up to 5 days.
  • Freeze cooled casserole for up to 3 months.
  • Reheat in the microwave in individual portions, or bake covered at 350°F for 20-25 minutes.
