Be prepared to watch this Guacamole dip disappear! This was another viral recipe I had saved on Instagram and every time I would visit my saved recipes, it was taunting me to make it.

When I say this is probably the best way I’ve ever enjoyed guacamole I mean it with all my heart! This hits every check point for texture. The layer of creamy guac followed by a layer of cool crisp corn salad is absolute PERFECTION! You’ll need a big handful of tortilla chips for scooping and you’re welcome.

Simple Ingredients:

  • Avocados– You’ll want to use fresh avocados for the best flavor.
  • Lime juice– I use a touch of lime juice in the guac and the corn salad.
  • Jalapeno– This gives the guac a little heat but also flavor.
  • Seasonings– Garlic powder, salt and pepper.
  • Fresh corn– I use raw corn right off the cob.
  • Cilantro– Adds a fresh flavor.
  • Red onion– Gives the corn salad a little bite.
  • Avocado oil– Just a touch to bring the corn salad together.
  • Feta cheese– I like to use fresh feta for the best flavor.

My Changes:

  1. Corn– The original recipe uses grilled corn off the cob but I love the texture and juiciness of fresh raw corn. Plus, it’s an extra step I don’t have to do.
  2. Seasonings– I also reduced the garlic powder down to 1/4 tsp from 1 tsp so the avocado flavor would shine.
  3. Avocado oil– This was not an ingredient that she added but the oil not only increases the nutrients in the corn salad, but it also creates a bit of a dressing when coupled with the lime juice.
  4. Red onion– I didn’t want the salad to hit you in the face with onion flavor so I only added a 1/4 cup vs. 1/3 cup.

How To Make Guacamole with Corn Feta Salad:

Step One. In a medium bowl mash avocados to your liking then stir in garlic powder, lime juice, and diced jalapeno. Season to taste with salt and pepper.

Step Two. To another medium bowl add fresh corn, onion, cilantro, lime juice, avocado oil, and crumbled feta cheese. Season to taste with salt and pepper and gently stir to combine.

Step Three. In a medium shallow plate or pie dish add the guac and smooth out creating a layer. Add the corn salad over the top of the guac and create another layer but don’t mix the two together.

Recipe Tip:

To keep the mashed avocado from turning brown while you prepare the corn salad, place a piece of plastic wrap over the top. Gently press the plastic wrap on top of the guacamole and keep it in the refrigerator until you are ready to assemble the dip.

Absolutely, but the feta offers great flavor and saltiness. It’s not overpowering. If you don’t like feta you can use crumbled Queso Fresco cheese.

For The Guacamole:

  • 4 medium size ripe avocados
  • 1/2 lime, juiced
  • 1/4 tsp garlic powder
  • 1 small jalapeno, seeded and diced small optional
  • salt and pepper to taste

For The Corn Feta Salad:

  • 1 cup fresh corn off the cob, about 1 large ear
  • 1/4 cup chopped cilantro
  • 1/4 cup red onion, diced fine
  • 1/3 cup crumbled feta see notes for other options
  • 1/2 lime, juiced
  • 1/2 tbsp avocado or olive oil
  • salt and pepper to taste

Instructions

Guacamole:

Assemble Dip:

  • In a medium size shallow plate or pie dish add the prepared guacamole and smooth out creating a layer. Add the corn salad over the top of the guac and create another layer but don’t mix the two together. Serve immediately with your favorite tortilla chips and veggies.
