This recipe is great because you only need a handful of ingredients, one bowl, and very little prep time. The dough comes together quickly and all that's left is to scoop and bake.

How To Make Healthy Peanut Butter Chocolate Chip Cookies

  • Blend eggs- Use a hand mixer to blend eggs and maple syrup until light and foamy.
  • Stir in peanut butter- Mix baking soda and salt together than sprinkle over eggs, then pour in vanilla and add peanut butter. Use a large spoon to combine.
  • Combine remaining ingredients- Next fold in almond flour, oats, and chocolate chips until a soft dough forms.
  • Form cookies- Use a small cookie scoop to portion out dough and place on a cookie sheet lined with parchment paper. Use the bottom of a cup to lightly press down. At this time you can sprinkle a little sea salt over the top.
  • Bake- Place cookies in a preheated 350℉ oven and bake for 9-10 minutes or until just set. Allow to cool a few minutes on the baking pan before transferring to a cooling rack. Enjoy warm.

Ingredients

  • 2 large eggs, room temperature see tip below for room temp eggs
  • cup pure maple syrup
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 ½ teaspoon vanilla extract
  • 1 cup natural creamy peanut butter
  • ½ cup old fashioned oats not quick oats
  • ½ cup blanched, fine almond flour
  • ½ cup dark or semi-sweet chocolate chips
  • sea salt for sprinkling on top optional

Instructions

Preheat oven to 350℉. Line a sheet pan with parchment paper or a silicone mat.

  • In a medium mixing bowl use a hand mixer to beat eggs and maple syrup until eggs are light and foamy on top.
  • Stir together the baking soda and salt then sprinkle over the beaten eggs (do not mix) then pour in vanilla and add peanut butter. Use a large spoon to stir together the ingredients until combined and creamy.
  • Next add oats, almond flour, and chocolate chips. Fold and gently stir together until a soft dough forms.
  • Use a small cookie scoop to portion out dough balls and place them about 2 inches apart on your prepared sheet pan. Take a small cup and use the end to slightly press down the dough balls. Not flatten them, just enough to give them a head start so they spread enough.
  • Sprinkle the tops with a little sea salt if desired and bake in your preheated oven for 9-10 minutes or until cookies look set. Be careful not to over cook them otherwise they will be tough when they cool.
  • Allow baked cookies to rest on baking pan for 2-3 minutes then transfer them to a cooling rack. Enjoy warm.

Notes

Need room temp eggs fast? Add eggs to a bowl with lukewarm water and allow to set for 5-10 minutes. This will help take the chill off so the cookies bake more evenly.
