Ingredients

Dressing

  • ¼ cup mayo
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 2 teaspoon whole grain Dijon mustard
  • salt and pepper to taste

Salad

  • 2 cups romaine lettuce, chopped fine
  • 4 large slices salami
  • 4 large slices pepperoni
  • 4 deli slices smoked turkey
  • ½ cup cucumber, diced small I use English cucumber
  • handful cherry tomatoes, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup banana peppers, chopped
  • ¼ cup pickles, chopped
  • 4 hoagie rolls
  • extra mayo for rolls

Instructions

  • Add all the dressing ingredients to a small bowl and combine until creamy and smooth. Taste to season for salt and pepper.
    ¼ cup mayo
    1 tablespoon red wine vinegar
    1 teaspoon dried oregano
    2 teaspoon whole grain mustard
    salt and pepper to taste
  • Add all the salad ingredients to a medium mixing bowl and pour in all the dressing. Toss until the veggies and meat are well coated.
    2 cups lettuce
    4 slices each, salami, pepperoni, smoked turkey
    ½ cup cucumbers, diced fine
    ¼ cup banana peppers, chopped
    ¼ cup pickles, chopped fine
    ¼ cup red onion, sliced
  • Spread a light layer of mayo on each hoagie roll, then fill with a generous amount of chopped salad mixture. Serve immediately.

Notes

🥑Additional ingredients to add: roasted red peppers, cheese, avocado, artichoke hearts, capers, pickled beets. 
🥡Leftovers- Chopped salad can be enjoyed leftover, however, the lettuce won't be as crunchy the second day. I find I can enjoy this salad up to 2 days after.
