My favorite recipes to cook during the weekdays are one-skillet meals. We are busy so I need simple dinners to throw together that are also healthy and delicious. This Italian Ground Turkey and Sweet Potato Skillet definitely fits the bill. The ingredients are fresh, healthy, and full of flavor. And if we’re lucky, leftovers make a great protein packed lunch.

I love the savory, slightly sweet flavor of this skillet meal. Every bite has a little meat, potato, beans, sauce, and cheese. It is truly delicious, comforting, and filling. And let me just say, my family is not big on sweet potatoes but they absolutely love them in this recipe. Yay!

Ingredients for Italian Ground Turkey and Sweet Potato Skillet:

  • Olive oil
  • Sweet potato
  • Lean ground turkey
  • Onion
  • Fresh Garlic
  • Seasonings- Italian seasoning, salt & pepper
  • Northern white or cannellini beans
  • Chicken stock
  • Marinara or Pasta sauce
  • Fresh herbs- parsley & basil
  • Mozzarella cheese
  • Parmesan cheese

This is an easy meal to customize and use what you have on hand. Ground beef, chicken or Italian sausage are great substitutes for turkey. Swap out the sweet potatoes for russets, Yukon gold, or red potatoes. Use your favorite marinara or pasta sauce. Lots of options for a great supper!



How To Make Italian Ground Turkey and Sweet Potato Skillet:

Step 1. Heat oil in a large skillet over medium high heat. (I love my cast iron skillet for this recipe). Add sweet potatoes and cook about 5-minutes, stirring often, until golden. Potatoes won’t be cooked all the way at this point. Transfer potatoes to a plate.

Step 2. Add a little more oil to the skillet and cook ground turkey and onion. Cook turkey until no longer pink, about 5 minutes. Add in the garlic and cook 1-minute.

Step 3. Add sweet potatoes back to the skillet along with seasonings, beans, chicken stock, marinara, parsley and basil. Stir to combine. Reduce heat to medium low and cook another 7-10 minutes or until potatoes are fork tender.

Step 4. When potatoes are cooked, sprinkle the top with mozzarella and parmesan cheese, and drizzle with remaining marinara sauce. Serve immediately.



Tips and suggestions:

  • Sweet potatoes can take a bit to cook especially if they’re cut on the larger size. Use a lid the last 10-minutes of the cooking time to trap the heat and cook the potatoes faster.
  • Use other seasonings like cumin and chili powder for a taco flavor, or thyme and rosemary for an earthy flavor.
  • Add other veggies like chopped spinach, diced zucchini, or a frozen veggie blend.

Ingredients
  

  • 3 tbsp olive oil, divided
  • 1 medium sweet potato, peeled and cut in 1/2-inch cubes
  • 1 lb lean ground turkey
  • 1/2 cup chopped yellow onion
  • 1 garlic clove, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 (15oz) can northern or cannellini white beans, drained and rinsed
  • 1/2 cup chicken stock
  • 1 cup marinara sauce, divided
  • 1/4 cup chopped, fresh Italian parsley
  • 1/4 cup chopped, fresh basil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions
 

  • Heat 2 tbsp of olive oil in a large skillet over medium high heat. Add sweet potatoes and cook 5-8 minutes, stirring often, until golden. Potatoes won't be cooked all the way at this point. Transfer to a plate.
  • Add remaining 1 tbsp olive oil to the skillet and cook ground turkey and onion until turkey is no longer pink, about 5-minutes. Add garlic and cook 1-minute.
  • Add sweet potatoes back to skillet along with seasonings, beans, chicken stock, 1/2 cup marinara, parsley and basil. Stir to combine. Reduce heat to medium low and cook another 7-10 minutes or until potatoes are fork tender, stirring occasionally.
  • When potatoes are cooked, sprinkle the top with mozzarella and parmesan cheese and drizzle with remaining 1/2 cup marinara sauce. Serve immediately.

Notes
