This Italian Turkey Sausage Soup is a great meal when you want something fast and simple to make but is still comforting and cozy. The broth has a rich tomato flavor and each bite is loaded with tender sausage, beans, and kale for an extra boost of nutrition. Definitely a feel good soup!

This soup needs nothing more than a hunk of crusty bread to soak up the flavorful broth. Your family will slurp every last bit!

Simple Ingredients:

Ingredients list for Italian turkey sausage soup with beans and kale. Olive oil, Italian turkey sausage, onions, garlic, white  navy beans, pasta sauce, chicken stock, red pepper flakes, fresh kale, and parmesan cheese.
  • Oil- I use a little olive oil since we are using a leaner sausage.
  • Turkey sausage- I use Italian ground turkey sausage which is already spiced and adds great flavor to the soup.
  • Onions and garlic- Aromatics to infuse flavor into the soup.
  • White beans- Use white navy or great northern white beans.
  • Pasta sauce- You can really use your favorite pasta sauce or even homemade. I love the Rao’s tomato basil pasta sauce.
  • Chicken stock- This adds a savory flavor to the soup.
  • Crushed red pepper flakes- This is optional but a touch of heat rounds out the soup.
  • Kale- I like to use curly kale as it has a mild flavor. You can also use spinach.
  • Parmesan cheese- This is an optional garnish but adds a wonderful cheesy and salty flavor to the soup.

Substitutions and Add-Ins:

  • Meat- Use your favorite uncooked Italian sausage brand. Pork, chicken, or turkey. You can use links just make sure you remove the casings.
  • Veggies- Add other veggies to bulk up the soup. Carrots, celery, zucchini, and mushrooms would be a nice addition.
  • Fresh herbs- Adding fresh herbs always makes a soup extra special. Parsley, basil, or fresh thyme are great options.

How To Make Italian Turkey Sausage Soup with Beans and Kale:

Step One. Heat a large soup pot with a fitted lid to medium heat. Add oil, sausage, and onions. Cook sausage breaking into crumbles until cooked through. Add garlic, then add beans, pasta sauce, chicken stock, and crushed pepper.

Step Two. Bring broth to a medium simmer and add kale. Cover soup pot partially with a lid unless you have a vent hole on your lid, and cook stirring occasionally for 15-minutes. Add salt or pepper if needed and garnish with parmesan cheese if desired.

Tips:

  • A great soup when you need to clean out the fridge. This is the perfect soup to use up almost expired veggies, half jars of pasta sauce, or other items you might need to use. Have fun creating your best sausage soup!
  • Remove any excess grease from the pot. Depending on the type of sausage you use, if it has a high fat count, make sure to drain the extra grease.
  • Season to taste. Make sure you hold off seasoning the soup until the very end. I did not need to season with any salt and pepper. My stock, pasta sauce, turkey sausage, and parmesan cheese added plenty of seasoning.

Does Turkey sausage soup freeze well?

Yes! As a matter of fact I love to have a serving of this in the freezer when I get a craving for soup. Make sure to completely cool the soup before placing it in a freezer safe container or jar. Freeze for up to 4 months.

Can I use tomato sauce instead of pasta sauce?

I would not recommend using tomato sauce unless you are going to be adding in other spices and herbs. Store-brand pasta sauce is already infused with great flavors making it perfect for this soup.

What if I don’t like sausage?

You can certainly replace the sausage in this soup for a leaner ground turkey or beef. Make sure to add in additional seasonings like oregano or Italian seasoning.

Ingredients

  • 1 tbsp olive oil
  • 1 pound Italian ground turkey sausage I use Jenny-O brand
  • 3/4 cup yellow onion, diced small
  • 2 garlic cloves, minced
  • 24 ounce jar pasta sauce, or 3 cups I use Rao's tomato basil
  • 3 cups low-sodium chicken broth
  • 2 cans white navy beans, drained and rinsed
  • 1/4-1/2 tsp crushed red pepper flakes optional
  • 3 cups chopped kale I use curly kale
  • salt and pepper to taste
  • grated parmesan cheese to garnish optional

Instructions

  • Heat a large soup pot with a fitted lid to medium heat. Add 1 tbsp olive oil, 1 lb Italian ground turkey sausage, and 3/4 cup onions. Cook sausage breaking into crumbles until cooked through and no longer pink. A little grease is okay but remove any excess.
  • Add 2 minced garlic cloves and sauté for 30-seconds, then add 2 cans of white beans, 3 cups pasta sauce, 3 cups chicken broth, and 1/4-1/2 tsp crushed red pepper flakes. Stir to combine.
  • Bring liquid to a medium boil and add 3 cups kale. Stir and cover loosely with a lid, unless your lid has a venting hole. Cook for 15-20 minutes stirring occasionally. Season with salt and pepper if needed. Ladle into serving bowls and garnish with parmesan cheese if desired.
