Marinated Grilled Chicken
Chicken thighs and drumsticks marinated with fresh lime juice, soy sauce, worcestershire, olive oil, and lots of herbs and spices for the absolute most flavorful grilled chicken.

It’s juicy and salty and herby and slightly smoky. Did I mention it’s super easy too! Everything gets tossed in a Ziplock bag for easy marinating and clean up. And If you don’t have much time, it’s one of those recipes you can decide on a whim and have ready to eat in under an hour.
I love using boneless skinless chicken thighs and drumsticks as it yields the best flavor, but if you prefer chicken breast, those work well too. Or throw in a little bit of each so everyone can choose their favorite pieces.

Marinated Grilled Chicken
Ingredients
- 4 boneless skinless chicken thighs
- 4-5 chicken drumsticks
Marinade
- 1/4 cup olive oil
- 1/2 lime, zested
- juice of lime
- 1 tbsp soy sauce
- 1/2 tsp Worcestershire
- 1 tsp Johnny's chicken or steak seasoning or use your favorite multi-purpose chicken seasoning
- 1 tsp dried parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp italian seasoning
- 1/2 tsp smoked paprika
- 1 tsp salt
- 1/4 tsp ground black pepper
- lemon or lime slices for serving
Instructions
- Place chicken pieces in a large Ziplock bag. Add olive oil, lime zest, juice of 1 lime, soy sauce and worcestershire.
- In a small bowl add the dry seasonings and mix to combine. Add the seasonings to the chicken, seal the bag, and toss well making sure all the pieces are coated.
- Place in the refrigerator for at least 30 minutes or up to 24 hours.
- Heat outdoor or indoor grill pan to medium high heat. Brush surface with olive oil and give the chicken another good shake in the bag before adding to the hot grill.
- Cook chicken turning every 3-5 minutes until golden and charred in spots, about 25 minutes. Depending on how hot your grill gets you may need to reduce or increase the cooking time. Chicken is done when it reaches an internal temp of 165°.
- Place chicken on serving plate and place fresh lemon or lime slices in between the chicken pieces, Cover with foil to let rest for 5 minutes before serving. This will ensure the chicken stays nice and juicy.
