This Mediterranean Coleslaw Chicken Salad is a great recipe for convenient items like slaw mix and pre-cooked chicken. It’s fresh and healthy with lots of veggies and protein. I warn you though, your taste buds will literally do cart wheels once you try the creamy pepperoncini dressing.
Make this salad for a light dinner or lunch, or meal prep it over the weekend for a few easy meals during the weekday. The flavors get better and better as it sits.

Simple Ingredients:
- Pepperoncini dressing- Olive oil, pepperoncini peppers and juice, lemon juice, Dijon mustard, honey, smashed garlic, Greek yogurt, dried oregano, salt and pepper.
- Coleslaw mix- I use one bag from the grocery store that has green and purple cabbage, and carrots.
- Other veggies- Red bell peppers, and red onions.
- Herbs- Fresh parsley
- Kalamata olives- This adds a classic Mediterranean flavor.
- Chicken- I use leftover shredded chicken from a boneless, skinless chicken breast.
- Feta cheese- I like to buy the pre-crumbled feta seasoned with tomato and basil.
Substitutions and Add-Ins:
- Veggies- Add other veggies to this salad like cucumbers, zucchini, kale, or even tomatoes would be a nice touch. If you prefer to chop your own cabbage I suggest both green and purple so the salad has lots of color.
- Other ingredients to consider- If you don’t like Kalamata olives use classic black olives instead. Chickpeas would be a nice additional and offer extra protein and fiber. Consider adding other fresh herbs like basil or oregano.
- Dressing- While the dressing is mouthwatering delicious, most grocery stores carry a pepperoncini vinaigrette, or use your favorite bottle of Italian dressing.
How To Make Mediterranean Coleslaw Chicken Salad:

Step One. Mix all the dressing ingredients in a medium size mason jar. Pop the lid on and shake until well combined.
Step Two. To a large bowl add coleslaw mix, chicken, bell peppers, red onion, parsley, and feta cheese. Pour in all the dressing and toss until dressing has well coated the ingredients. Add more feta and serve.
Tip:
- đź’ˇRinse coleslaw mix- To revive coleslaw mix and make it super crunchy, rinse under cold water for 30-seconds and drain. This will enhance the salad experience.

This recipe will last 4-5 days in the refrigerator in a sealed container. It still has great flavor and texture.
The dressing ingredients can cause the cabbage to expel water. You can add 1 tbsp of salt to the slaw mix in a colander. The salt will draw out excess moisture and prevent a watery salad. Make sure to rinse well after the salting step.
Yes! If you prefer to use all mayo it will still be delicious. You can also use half yogurt, half mayo.
Mildly spicy. This salad does have a little kick to it from the pepperoncini’s. If you want to cut down on the spice level, use less pepperoncini’s.

Equipment
- 1 large mixing bowl
- 1 medium size mason jar, with lid, or small mixing bowl
Ingredients
Pepperoncini Dressing:
- 1/2 cup finely chopped pepperoncini peppers
- 2 tbsp pepperoncini liquid from the jar
- 2 tbsp fresh lemon juice, from 1 medium lemon
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp dried oregano
- 1 garlic clove, smashed, or mince if you want a stronger garlic flavor
- 3 tbsp full-fat, plain Greek yogurt
- 1/4 cup olive oil
- salt and pepper to taste
Coleslaw Salad:
- 1 (14) ounce bag coleslaw mix
- 1/2 cup thinly sliced red bell pepper or use yellow or orange
- 1/3 cup thinly sliced red onion
- 1/3 cup pitted and halved, Kalamata olives
- 1/4 cup chopped parsley
- 1/4 cup crumbled feta cheese I use the tomato basil pre-crumbled feta
Instructions
- Add all the dressing ingredients to a medium size mason jar with a fitted lid or use a small bowl. Mix until well combined. 1/2 cup chopped pepperoncini's, 2 tbsp of pepperoncini juice, 2 tbsp lemon juice, 1 tbsp Dijon mustard, 1 tbsp honey, 1 tsp dried oregano, 1 smashed garlic clove, 3 tbsp Greek yogurt, 1/4 cup olive oil, salt and pepper to taste. Set aside until ready to use.
- Add all the coleslaw salad ingredients to a large bowl. 1 (14) ounce bag coleslaw mix, 1/2 cup red bell pepper, 1/3 cup red onions, 1/3 cup Kalamata olives, 1/4 cup parsley, 1/4 cup feta cheese.
- Pour all the dressing over the coleslaw salad, making sure to remove the smashed garlic clove. Use tongs to combine well so all the dressing coats the salad ingredients. Top with more feta cheese if desired and serve.
