- 1 packet low-sodium taco seasoning or 3 tbsp homemade
- 1 (15) ounce can black beans, drained and rinsed
- 1/2 cup roasted corn, frozen or canned
- 1 (10) ounce can, mild red enchilada sauce
- 1/4 cup water
- 1/2 cup sour cream
- 1 cup Colby Jack cheese, shredded
- 1 (32) ounce bag, frozen tater tots
Instructions
Preheat oven to 425℉ and grease a 9×13-inch baking dish with non-stick cooking spray or oil.
- In a large skillet over medium heat, brown 1 pound ground beef with 3/4 cup onion and 1/2 cup green bell pepper. Remove any excess grease then add 1 packet of taco seasoning. Toast for 1-minute.
- Stir in 1 can black beans, 1/2 cup roasted corn, 1 10 ounce can enchilada sauce, and 1/4 cup water. Turn heat to low and add 1/2 cup sour cream. Combine and remove the pan from the heat.
- Transfer beef mixture to prepared baking dish and smooth out to the edges. Top with 1 cup Colby Jack cheese, then place tater tots in a single layer over the cheese.
- Bake uncovered for 25-30 minutes or until tots are crispy and the casserole is bubbly.
