Today, these Mini Chocolate-Covered Rice Krispies Treats feel like the grown-up (but still totally fun!) version, with an indulgent chocolate coating that turns a simple childhood favorite into an extra-special dessert bite.

During the holidays especially, I love having a treat that’s easy to make, easy to share, and still makes a statement on any dessert table. This recipe is as simple as preparing a batch of classic Rice Krispies treats, cutting them into bite-size squares, and dipping them into your favorite melted chocolate. To keep things festive, I use holiday sprinkles, but you can tailor these treats to fit any occasion — from birthday parties to baby showers to everyday snacking.

How To Make Mini Chocolate-Dipped Rice Krispies Treats

  • Start by making the rice Krispies treats following the back of the cereal box and place in the refrigerator to cool.
  • When the treats have cooled and set, cut into small bite-size squares.
  • Meanwhile, melt chocolate wafers in the microwave until the chocolate is smooth.
  • Take one rice Krispies square and use a fork to roll in the melted chocolate until coated, then place on a sheet pan lined with parchment paper.
  • Before the chocolate hardens, sprinkle the top of each treat with festive sprinkles. Allow to cool completely, about 30-minutes.

Ingredients

  • 6 cups rice krispies cereal
  • 10.5 ounce regular size marshmallows
  • 3 tbsp butter I use salted
  • 2 (10.5) ounce bags, Ghirardelli milk chocolate wafers

Instructions

Prepare a 9×13-inch baking dish with butter making sure to get the sides as well. Also prepare a large sheet pan with parchment paper.

  • In a large pot melt butter over low heat. Add marshmallows and stir until they are fully melted. Be careful not to walk away as the marshmallows can scorch.
  • Remove the pot from the heat and add cereal. Use a spatula to toss and combine well. Work quickly as the cereal mixture will set up fast.
  • Transfer to your prepared baking dish and spread out smooth, lightly pressing down but don't pack it too firmly. Place in the refrigerator for 20-30 minutes to set up.
  • When treats are set, loosen the sides of the pan with a spatula and turn out on a cutting board. Use a sharp knife to cut in 1-2 inch bite size squares.
  • Meanwhile melt 1 (10.5) ounce bag of chocolate wafers in a microwave safe bowl in 30-second intervals, stirring in between, until the chocolate is fully melted. NOTE: Only melt 1 bag of chocolate at a time. When you run out of the first bag, melt the second.
  • Dip rice Krispie squares into melted chocolate using a fork and allowing the excess to drip off. Place chocolate square on your sheet pan lined with parchment paper, then sprinkle with festive sprinkles of your choice. Continue to coat rice Krispies with chocolate and adding sprinkles if desired.
  • Allow squares to cool completely, about 30-minutes at room temperature, or place them in the refrigerator until set. Enjoy or store for later.
