Best of all, it’s fast and easy to prepare, coming together in just 30-minutes.

This Mushroom Grilled Cheese was an attempt to add more vegetarian options in our weekly meal plan, and let me tell you, if all meatless meals could satisfy my taste buds, ON ALL LEVELS, like this one, I could ditch the meat altogether without a second thought.

Mushrooms are wonderful because they have a hearty and meaty texture making them a perfect substitute for meat. Adding them in-between slices of bread with melty cheese and juicy tomatoes, heavens gracious. This is not just a sandwich, it’s a full-on experience, and I assure you, your taste buds will control every last bite.

Simple Ingredients For Grilled Mushroom Sandwich

Just a few ingredients make the best sandwich. Find all the measurements in the recipe card below.

  • Bread- We love sourdough and it makes a mean grilled cheese. Feel free to use your favorite bread.
  • Mushrooms- Cremini or baby Bella mushrooms work best for a grilled cheese because they’re meaty with a rich umami flavor.
  • Seasoning- For the seasoning I use Salad Supreme Seasoning (by McCormick.) It has the perfect flavors for a grilled cheese. It’s also great with pasta salad, sprinkled over popcorn, roasted chicken, and so much more.
  • Cheese– I use two different cheeses for this recipe–pepper Jack and provolone.
  • Butter– Butter is needed to sautĂ© the mushrooms.
  • Tomato– This is optional but the tomato offers a nice balance with the rich mushrooms and cheese.
  • Mayo- I use mayo instead of butter to grill the bread because mayo has a higher smoke point, plus it offers a yummy, tangy flavor.
  • Salt and pepper

Variations

  • Add other veggies- If you don’t care for mushrooms or maybe you want to add in other veggies, try–grilled onions, grilled zucchini, roasted red peppers, or sautĂ©ed spinach.
  • Use another cheese you enjoy- Cheddar, Monterey or Colby Jack, mozzarella, or gruyere cheese.
  • Try other seasonings- If you prefer to use another seasoning with your mushrooms or veggies, try– Italian seasoning, garlic powder, oregano, thyme, or your favorite all-purpose seasoning. You can really get creative and use what you love.

  • SautĂ© mushrooms in a large skillet with butter and seasonings until golden brown.
  • Build the sandwich by layering a slice of cheese on one half of your bread. Top with mushrooms, tomato slices, and another layer of cheese. Do the same with the second sandwich.
  • Assemble the other half of the bread slice on top of the final layer and spread both sides of the bread with mayo.
  • Grill sandwich on both sides in the same skillet until golden brown and cheese is melted. Slice and serve.

Helpful Tips

  • đź’ˇUse a thicker bread. This recipe needs a sturdier, thicker bread to hold up the mushrooms and tomatoes. I love to use a thick sourdough.
  • đź’ˇMake sure your skillet isn’t too hot. Heat skillet to medium-low when doing grilled cheese. You don’t want the bread getting too brown before the cheese melts.
  • đź’ˇA non-stick or cast iron skillet works best. Make sure to use a non-stick skillet or a seasoned cast iron if you have it so the bread and cheese don’t stick to the pan.

đź—¨How do I keep the sandwich from getting soggy?

Make sure to cook all the liquid out of the mushrooms. If your tomatoes have a lot of inside flesh with seeds, you can remove that before placing on the sandwich.

đź—¨Can I make this sandwich ahead of time and grill it right before eating?

No. It is best to assemble, cook, and enjoy right away for the best texture and experience.

Equipment

Ingredients

  • 1 tbsp butter
  • 8 ounces cremini or baby Bella mushrooms, sliced
  • 1 1/2 tsp McCormick salad supreme seasoning or use seasonings you love–see notes for ideas
  • 4 thick bread slices I use sourdough
  • 4 provolone cheese slices
  • 3 pepper jack cheese slices
  • 4 tomato slices
  • 2 tbsp mayo or use butter

Instructions

  • Heat a large skillet to medium heat and melt butter. Add mushroom slices and salad supreme seasoning. SautĂ© mushrooms until golden brown and tender. Make sure there isn't any liquid left in the pan.

    1 1/2 tsp salad supreme seasoning

Build Sandwich

  • Place 1 1/2 slices of pepper jack cheese on one half of a bread slice and do the same for the second sandwich. You'll use three slices of pepper Jack cheese divided between two sandwiches.

    3 slices pepper Jack cheese
  • Next, place mushrooms on top of the cheese, dividing between the two sandwiches. Place the pan back on the heat and set to medium-low. Add tomato slices and season lightly with salt and pepper, then add a final layer of provolone cheese–I use about 2 slices per sandwich.

  • Place the other bread slice on top and spread a thin layer of mayo or butter on both sides. Grill in the heated skillet on the first side, covered, until golden brown, about 4-5 minutes. Make sure to watch the heat so the bread doesn't burn. Carefully flip the sandwich and grill another 3-4 minutes or until golden brown on the second side and cheese is melted. Slice and serve.
