One-Pan Creamy Chicken Meal
You must be team skillet meals if you happened upon this beauty. Evenings can be a whirlwind with things like kids activities, homework, and laundry. This creamy chicken mushroom pasta with broccoli cooks entirely in one skillet, making it easy to prep, cook AND clean-up.
This dinner kind of reminds me of my One-Skillet Beef Stroganoff—still rich and creamy, but made with tender chicken and the added bonus of broccoli for a boost of nutrition. It’s everything you hope for in a quick dinner, that’s still comforting and full of flavor.
Ingredients You Need
- Chicken– We use chicken thighs for extra flavor but chicken breasts will also work.
- Aromatics– Shallots and garlic
- Veggies– Mushrooms and fresh broccoli
- Chicken broth
- Pasta– Any medium shape pasta will work. Spiral pasta captures the creamy sauce.
- Flour– We use all-purpose flour which helps thicken the creamy sauce.
- Pantry seasonings– Mustard powder, dried thyme and basil, garlic powder, salt and pepper.
- Heavy cream– You can also use half and half.
- Parmesan cheese
- Parsley

- Brown chicken-In a large skillet brown chicken pieces with olive oil until cooked through. Transfer to a plate.
- Cook mushrooms and shallots-In the same skillet brown shallots and mushrooms until softened.
- Add flour-Stir in flour and cook a few minutes then add chicken broth.
- Combine-Once chicken broth starts to bubble, add back the chicken, and stir in the broccoli and pasta.
- Simmer and cook-Bring to a simmer and cook for 8-9 minutes, just until pasta is al dente.
- Finish-Stir in heavy cream and parmesan cheese, then garnish with fresh parsley.





Helpful Tips
- Prep all the ingredients before hand and have them ready to go before you heat up your skillet. This recipe comes together quickly and it’s helpful if you’re not prepping during the process.
- Add more broth if your pasta needs more cooking time but there isn’t enough liquid to finish cooking them. Start with 1/3 cup both and add more as needed.



One-Skillet Creamy Chicken and Mushrooms
Equipment

Ingredients
- 1 pound chicken thighs (fat trimmed) or breast cut in bite size pieces we use chicken thighs for maximum flavor
- 1 tbsp olive oil
- salt, pepper, and garlic powder to taste
- 1 medium shallot, sliced
- 8 ounces baby Bella or cremini mushrooms, sliced
- 2 garlic cloves, minced
- 1 tsp mustard powder
- 1 tsp dried thyme
- 1/2 tsp dried basil
- 2 tbsp all-purpose flour
- 4 cups chicken broth, plus more if needed
- 2 cups corkscrew pasta, uncooked
- 1 1/2 cups broccoli florets, fresh
- 1/4 cup heavy cream or half and half
- 1/3 cup grated parmesan cheese
- 2 tbsp parsley, roughly chopped
Instructions
- Season chicken pieces with salt, pepper, and garlic powder. Measure with your heart. Heat a large skillet to medium high heat and add 1 tbsp olive oil. Add chicken pieces and sear until golden brown and cooked through. Transfer to a plate.
- To the same skillet add 1 medium shallot and 8 ounces mushroom slices. Sauté veggies until mushrooms are lightly golden and shallots are softened. Add 2 minced garlic cloves and cook another 30-seconds.
- Next stir in 1 tsp mustard powder, 1 tsp dried thyme, 1/2 tsp dried basil, and 2 tbsp flour. Continue to stir until you don't see any white bits of flour, about 1-minute.
- Slowly whisk in 4 cups chicken broth and let it come to a simmer. Stir in cooked chicken, 2 cups pasta, and 1 1/2 cups broccoli florets. Bring back to a simmer and cook stirring occasionally for 8-9 minutes. Just until pasta is al dente. There should be little to no liquid and the sauce creamy.
- Stir in 1/4 cup heavy cream and 1/3 cup grated parmesan. Remove from the heat and taste for seasonings. You might need salt and pepper. Garnish with parsley and serve.
Notes
- Fridge: Store leftovers in an airtight container for up to 4 days.
- Reheat: Gently warm in the microwave or you can place a portion in a skillet over medium-low heat with a splash of milk or broth to loosen the sauce.
- Freezing: This dish is not recommended due to the dairy-based sauce and pasta will change in texture.
