We make tacos once a week. It is the most requested meal in my home and for good reason. Tacos are DE-licious! But I have to say, as easy as they are, I don’t always appreciate the extra mess, or the fact that I’m usually the last one building my tacos while my family is half way through eating theirs.

These Oven Baked Tacos are seriously THE BEST! They’re crunchy, chewy, meaty, cheesy, and completely irresistible! My favorite part…they don’t break and crumble all over my plate when I take a bite. That might seem trivial, but I hate when my taco falls apart after I’ve spent precious time filling and layering it perfectly with my taco goodies.

Meet my Oven Baked Tacos! A less messy and involved 30-minute meal the whole family can sit down and enjoy together.



Ingredients For Oven Baked Tacos:

  • Lean ground turkey or beef
  • Olive oil
  • Yellow onion
  • Taco seasoning (homemade or store bought)
  • Mild green chiles
  • Black or pinto beans
  • Shredded cheddar/Jack cheese
  • Stand and stuff taco shells

Taco Toppings:

  • Lettuce
  • Tomatoes
  • Olives
  • Cilantro
  • Sour cream
  • Salsa

The nice thing about Oven Baked Tacos is the filling has a chance to bake together and create a solid foundation for the taco toppings. We layer the beans first to make sure the bottom doesn’t get soggy, then layer on cheese, meat, and more cheese. You could really stop there and have a pretty great taco, but we love those fresh toppings like, cool crunchy lettuce, sweet tomatoes, green onions, and sour cream.


Taco Shells:

I use stand and stuff taco shells because they stay put while I’m filling them, plus there’s no domino affect when someone pulls one from the pan. You can definitely use any regular size crunchy taco shell.

Step by Step How To Make Oven Bake Tacos:

Step 1. Preheat oven to 350° degrees, then stand taco shells in a 9×13-inch baking dish that’s been sprayed with non-stick cooking spray. Bake in preheated oven for 8-10 minutes.

Step 2. While taco shells toast, brown ground meat in olive oil until crumbled and cooked. Add onion and cook another couple minutes. Then add taco seasoning, green chiles, and water. Stir and cook a few minutes. Remove from heat.

Step 3. Layer the bottom of each taco shell with beans, then cheese, a layer of ground meat, then more cheese. Bake until warmed through and cheese is melted.

Step 4. Let everyone build the rest of their taco with their favorite tacos toppings.


Can I Reheat Leftover Oven Baked Tacos?

The short answer is, yes! And they’re so delicious! I was really skeptical about this but since we often have a few tacos leftover, I wanted to test this out. Make sure you’re only storing the leftover tacos with beans, meat, and cheese. No extra toppings.

Wrap cooled tacos in foil, then place in the fridge for up to one day. To reheat- remove tacos from foil, then place standing up in an oven safe pan. Bake in preheat oven at 350° for 10 minutes, or until heated through.

These come out perfectly cheesy and have a nice crunch. Add your favorite fresh toppings for a second round of yummy Oven Baked Tacos!

Pro Tips:

  • Make sure beans are rinsed, drained, and patted dry. The beans create a foundation for the rest of the ingredients to rest on. This will prevent the bottom from getting soggy, so make sure the excess moisture has been blotted off before layering them on the bottom of the shell.
  • Remove excess grease from ground meat mixture. This will also help keep the shells from becoming soggy. We add green chiles and water which will give the meat plenty of moisture.
  • Bake taco shells before filling them. This will give the shells a nice toasty flavor and crunch before layering the ingredients.
  • Use a baking dish with 1-inch sides. This will ensure all the filling remains in one place and won’t spill over the pan. I use a 9×13-inch glass baking dish for best results.

Ingredients
  

  • 10 stand and stuff taco shells or regular size crunchy taco shells
  • 1 tbsp olive oil
  • 1 pound lean ground turkey or beef
  • 1/2 cup chopped yellow or white onion
  • 2 tbsp homemade taco seasoning or 1 store packet
  • 1 (4) oz can diced green chiles, drained
  • 1 (15.5) oz can black or pinto beans rinsed, drained, and patted dry
  • 1 1/2 cups shredded cheddar jack cheese or Mexican cheese blend

Taco toppings:

  • shredded lettuce
  • chopped tomatoes
  • green onion slices
  • olives
  • salsa
  • sour cream

Instructions
 

Taco Shells:

  • Preheat oven to 350° degrees, then stand taco shells in a 9×13-inch baking dish that's been sprayed with non-stick cooking spray. Bake in preheated oven for 8-10 minutes. Keep oven heated for the second round of baking time.

Meat Mixture:

  • Meanwhile cook meat. Heat olive oil in a large pan over medium heat and add ground meat. Cook, breaking into crumbles until no longer pink, about 5-6 minutes. If there is any excess grease, remove it at this time.
  • Add onion and cook another 3-4 minutes, then add taco seasoning, green chiles, and water. Stir and cook another 2-3 minutes. Remove from heat.

Layer Tacos:

  • Layer the bottom of each taco shell with 1-2 tablespoons of beans, a little cheese, 2 heaping tablespoons of ground meat, then a little more cheese. Bake in 350° degree oven until tacos are warmed through and cheese is melted.

Add Taco Toppings:

  • Let everyone layer their own favorite taco toppings and enjoy!

Notes
