If you’re a fan of pickles and salsa, you’re in for a treat. Let me introduce you to one of the most unexpectedly addictive condiments out there—Pickle de Gallo.
Yes, it’s exactly what it sounds like—dill pickles meet pico de gallo experience. It’s fresh, crunchy, tangy, and it works on just about anything. Think of it as your favorite dill pickle relish, but leveled up with cucumbers, onions, and a kiss of jalapeño heat.
Simple Ingredients

- Pickles– The star of the show! So make sure you choose a quality brand. We use Grillo’s classic dill.
- Cucumber– This offers another layer of crunch and freshness.
- Other veggies– Red and green bell peppers, red onion, and fresh jalapeno for a touch of heat.
- Dill– Fresh dill is best for this recipe but dried dill will also work.
- Pickle juice–
- Lime juice
- Salt and pepper
Pickle de Gallo Takes Minutes To Make
- Chop veggies and pickles.
- Add all the ingredients to a bowl and mix together. Adjust seasonings as needed.
- Enjoy right away or allow to set and marinate in the refrigerator for a few hours.



Tips and Suggestions For The Best Pickle Dip
- Chop all the ingredients super fine like you would for a classic pico de gallo, that way each bite has the perfect amount of texture and flavor.
- This dip gets better and better as it sets and marinates so it’s perfect to make a day in advance.
- If you want it extra spicy use the seeds and membrane of the jalapeno.
- Add more garlic flavor with freshly minced garlic.

When I first made this recipe my intention was for a chips and dip experience, but quickly realized it was an amazing condiment for burgers, hotdogs, or even a side dish type salad along with a BBQ chicken dinner. It’s so fantastically delicious and unexpected.



Pickle de Gallo
Equipment
- 1 medium bowl
Ingredients
- 1 cup dill pickles, chopped fine
- 1 cup English cucumber, chopped fine
- 1/2 cup red bell pepper, diced fine
- 1/2 cup green bell pepper, diced fine
- 1/4 cup red onion, diced fine
- 1 small jalapeno, seeds and membranes removed and diced super fine
- 2 tbsp fresh dill, chopped
- 2 tbsp pickle juice
- 1/2 lime, juiced, about 1 tbsp
- salt and pepper to taste
Instructions
- Add all the ingredients to a medium size bowl and toss to combine. Season with salt and pepper to taste. For best results, place pickle de Gallo in the refrigerator for a few hours to allow the flavors to blend together.
- Serve with tortilla or potato chips, or use as a condiment on burgers, hotdogs, and more.
