Quick and Easy Honey Vanilla Granola

Happy Monday! I hope everyone feels rested after the Holidays. My husband had a couple of weeks off from work and our daughter was on winter break from school and dance. It was lovely.

We are starting the year off right in The Menu Maid kitchen with this simple crunchy granola. My daughter had requested ingredients for yogurt parfaits and I knew just the granola recipe to make. Toasted oats coated with a touch of honey and a hint of vanilla is the perfect topping for yogurt, or in a bowl with your favorite milk. I love granola but often times it’s too sweet for me. This recipe is low in sugar and delicious. Plus, it can be made in under 20 minutes with ingredients you probably have on hand. Add mini chocolate chips and dried cranberries for an extra special treat.

Quick and Easy Honey Vanilla Granola

This simple granola can be made in under 20 minutes. Toasted oats, lightly sweetened and only 6 ingredients.

Ingredients
  

  • 1 1/2 cups quick or rolled oats
  • 1/3 cup almond flour substitute finely chopped nuts (almonds, walnuts, pecans)
  • 2 tbsp honey
  • 2 tbsp butter or coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions
 

Heat oven to 350 degrees F

  • In medium size mixing bowl add the oats, almond flour or nuts and cinnamon. Set aside.
  • In a small bowl combine the honey, melted butter or coconut oil, and vanilla extract.
  • Add the honey mixture to the oat mixture and stir to combine. On a large sheet pan with parchment paper spread the granola evenly. Bake for 8 minutes. Sir the mixture and spread evenly again. Bake another 7 minutes until golden brown. It will burn quickly so make sure to watch it.

Notes

I substituted the nuts in this recipe for almond flour because my daughter isn’t big on nuts. It still gives it that nutty flavor without the texture.
If you like granola a little sweeter, add an extra tablespoon of honey to the melted butter.Ā

Mini chocolate chips (add after it’s cooled)
Raisins or cranberries (add after it’s cooled)
