This quick and easy Chinese chicken salad is always a hit with friends and family. Shredded chicken, cabbage, toasted almonds, and crunchy ramen noodles with my easy sesame dressing. A perfect summer side or even the main coarse.
My mom had a handful of signature salads she made when I was growing up that made her the Queen of salads and she still holds that title to this day! This quick Chinese chicken salad is among the many that made the list, and was and still is one of our favorites.
This recipe is essentially store-bought ingredients making this the easiest and quickest salad to make. Packaged slaw mix eliminates all that chopping, and store-bought rotisserie chicken is a perfect short-cut. You can even buy pre-toasted almonds and sesame seeds to make this even faster and easier.
Basically everything gets dumped in a big bowl and tossed with the best sesame dressing. It’s ideal for warm weather because the cabbage doesn’t wilt like lettuce, and it stays fresh longer since this is a dairy free salad. This can be enjoyed right away, or make ahead and toss the dressing in right before serving.

Quick Chinese Chicken Salad
Ingredients
Salad
- 3 cups shredded cooked chicken, about 2 chicken breasts
- 16 ounce bag coleslaw mix, about 4 cups
- 4 green onions sliced diagonally
- 1 package ramen noodles broken in small pieces discard seasoning
- 1/2 cup toasted sliced almonds
- 2 tbsp toasted sesame seeds
Dressing
- 1/4 cup sugar can use 2 tablespoons if you like it less sweet
- 1/2 cup olive oil
- 1/2 tsp toasted sesame oil
- 6 tbsp seasoned rice vinegar
- 1 tbsp low sodium soy sauce
- 1/4 tsp ground black pepper
Instructions
- Add all the salad ingredients to a large bowl.
- In a mason jar combine dressing ingredients by shaking well with tight fitted lid.
- Pour dressing mixture over salad and toss to combine well. Serve right away or make salad ahead and pour on dressing right before serving.
