Let me start by saying when I made these for the first time I had to literally peel myself away from the dish. Who doesn’t love salty potato chips, and even better, when they are baked with cheese and bacon, oh my!

These Quick Irish Nachos might not be the traditional pub food made with potatoes, but equally, these are just as crave worthy, plus, take half the time to make!

What Are Irish Nachos?

Irish nachos is a simple snack typically made with sliced potatoes that are baked until crispy and topped with bacon, cheese, and sour cream. While this is not an actual Irish dish, it’s a nod to Ireland’s love for potatoes, swapping out tortilla chips with starchy spuds.

These Quick Irish Nachos, however, use kettle chips which means hardly any prep so you can have these on the party table in under 20-minutes.

Step One. Heat your oven to 350ā„‰ and grease your baking dish with non-stick spray.

Step Two. Spread potato chips in prepared baking dish, top with cheese, bacon, and repeat with another layer of chips, cheese, and bacon. Add a few jalapeno slices to the top if desired.

Step Three. Bake in the oven for 5-8 minutes or until the cheese is fully melted.

Step Four. Top nachos immediately with fresh tomatoes, chives, and dollop of sour cream. Serve right away!

  • Light on the toppings- Go light on the toppings,, especially the ones with more moisture like tomatoes. Too much will cause the chips to get soggy.
  • How to cook bacon fast- If you want to shave off a few extra minutes, add bacon slices in a single layer on a large microwave safe plate, lined with a thick layer of paper towels. Cover with another layer of paper towels and cook on high for 3-4 minutes until crisp.

Instructions

Preheat oven to 350ā„‰ and grease a 1 qt baking dish with non-stick spray.

  • Spread half of the potato chips in prepared baking dish. Top with 1 cup of cheese and half of the bacon. Repeat a second layer with the rest of the chips, cheese, and bacon. Top with a few jalapeno slices if desired.
