Quick Irish Nachos
These Quick Irish Nachos made with kettle potato chips, Colby Jack cheese, crispy bacon, and fresh toppings like tomatoes and chives. Truly an outstanding party snack made fast and your guests will devour them.
What You’ll Love About Quick Irish Nachos:
- Less than 20-minutes to make
- Crowd pleasers appetizer or snack
- Cheesy with lots of bacon flavor
- Crunchy, irresistible munchie food
Let me start by saying when I made these for the first time I had to literally peel myself away from the dish. Who doesn’t love salty potato chips, and even better, when they are baked with cheese and bacon, oh my!
These Quick Irish Nachos might not be the traditional pub food made with potatoes, but equally, these are just as crave worthy, plus, take half the time to make!
What Are Irish Nachos?
Irish nachos is a simple snack typically made with sliced potatoes that are baked until crispy and topped with bacon, cheese, and sour cream. While this is not an actual Irish dish, it’s a nod to Ireland’s love for potatoes, swapping out tortilla chips with starchy spuds.
These Quick Irish Nachos, however, use kettle chips which means hardly any prep so you can have these on the party table in under 20-minutes.
If you are scrambling to know what to take or make for your next casual gathering, Irish Nachos will be a total winner!

Simple Ingredients:
- Chips- You’ll want to use kettle potato chips for that classic potato flavor, plus they hold up well with the toppings.
- Cheese- I like using Colby Jack cheese. It’s melts perfectly with the chips.
- Bacon- You’ll want to cook your bacon good and crispy.
- Jalapenos- This is optional but gives the nachos a little kick.
- Tomatoes- This adds some freshness when the nachos are done baking.
- Chives- Adds a subtle onion flavor.
- Sour cream- Adds a nice creamy coolness after the nachos bake.
Substitutions:
- Chips- I would stick with the kettle chip brand but you can get creative and use other flavors like sour cream and onion, or jalapeno for spice.
- Cheese- Use your favorite shredded cheese. Cheddar, Monterey Jack, and Pepper Jack work well.
- Meat- Use another meat option like ground taco meat- chicken, turkey, or beef. Make sure not to add too much as it will weigh down the nachos making it hard to eat as a finger food.
- Other toppings- Add other toppings like green onions, cilantro, black olives, or guacamole.
How To Make Quick Irish Nachos:
See full instructions in recipe card below
Step One. Heat your oven to 350ā and grease your baking dish with non-stick spray.
Step Two. Spread potato chips in prepared baking dish, top with cheese, bacon, and repeat with another layer of chips, cheese, and bacon. Add a few jalapeno slices to the top if desired.
Step Three. Bake in the oven for 5-8 minutes or until the cheese is fully melted.
Step Four. Top nachos immediately with fresh tomatoes, chives, and dollop of sour cream. Serve right away!
Recipe Tips:
- More cheese is better- Don’t be shy with the cheese. The more the better.
- Light on the toppings- Go light on the toppings,, especially the ones with more moisture like tomatoes. Too much will cause the chips to get soggy.
- How to cook bacon fast- If you want to shave off a few extra minutes, add bacon slices in a single layer on a large microwave safe plate, lined with a thick layer of paper towels. Cover with another layer of paper towels and cook on high for 3-4 minutes until crisp.
Common Questions About Irish Nachos:
I would not recommend these type of Irish nachos leftover because you’re using potato chips. You’re likely not to have leftovers anyway. š
These would be great with any other snack or party food. You could also serve these as a fun side with a pot of chili.
I would assemble the nachos per the directions and bake them when you arrive at the host location. Take the extra toppings in separate containers and finish the rest of the steps after the nachos are baked.
