  • High heat is the best: Roasting at 425°F helps caramelize the outside while keeping the inside tender. It's a quick roast-no more than about 12 minutes.

Ingredients

  • 1 lb fresh asparagus, ends trimmed, about 1 inch
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt and black pepper or to taste

Instructions

Preheat oven to 425℉.

  • Prepare asparagus by trimming the ends, about 1 inch, then rinsing well with cold water. Use paper towels to pat dry.
  • Place asparagus in a single layer on a large sheet pan, drizzle with olive oil, and toss to coat each spear.
  • Season with salt and pepper, being careful not to over-salt. Give it another toss and make sure the asparagus are not overlapping each other.
  • Roast in the oven for about 10-12 minutes, giving the pan a shake once half way through the roasting time. The spears should be bright green, lightly roasted, and have a tender bite.

Notes

Store leftover roasted asparagus in a sealed container in the fridge for up to 3 days.
Don't over-crowd the pan. If you don't have a large sheet pan use two so the spears are not overlapping. You want them in a single layer for the best roasting flavor.
