Simple Chicken Salad
Equipment
- 1 medium serving bowl
- 1 small mixing bowl
Ingredients
- 1 ½ pounds cooked chicken, chopped or shredded
- ½ cup celery, diced
- ¼ cup mayo
- 2 tablespoon full-fat, plain Greek yogurt
- 1 teaspoon yellow mustard
- ½ lemon, juiced, about 2 tbsp
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- salt and pepper to taste
Instructions
- In a small bowl combine ¼ cup mayo, 2 tbsp Greek yogurt, 1 teaspoon mustard, ½ lemon, juiced, 1 tbsp each fresh chives and dill, salt and pepper to taste. Stir until creamy.
- In a medium serving bowl add 1 ½ pounds cooked chicken, ½ cup celery, and all the dressing. Toss to combine and adjust seasonings to taste.
