Skillet Tater Tot Casserole with Corn & Zucchini
A simple one-skillet dinner using lean ground turkey, roasted corn, tomatoes and zucchini, topped with crispy tater tots and cheese for a complete meal!

Jump to RecipeMost of us are familiar with the classic tater tot casserole, also known as hot dish in some areas. You know, the one with green beans or frozen veggies, ground beef, cream of mushroom soup and cheese. I loved this meal so much when I was growing up I requested it almost every year for my birthday. It is still one of my favorite childhood meals and I wouldn’t deny a big helping if my mom had me over for dinner, just sayin! 😉
While this skillet tater tot casserole is moderately different than the original, it is still filling and delicious. Packed with lots of veggies, lean ground meat, and of coarse crispy tater tots and cheese. It’s easy, healthy and so satisfying. This is also a perfect weeknight meal. It all comes together quickly in one skillet so it’s a great meal when you need dinner on the table fast.
Ground meat:
Traditionally tater tot casserole is made with ground beef but I like to use lean ground turkey. Using ground turkey in place of beef does reduce the saturated fat just a bit but more than anything, I just like the flavor of ground turkey over beef. This is really just preference in taste and what you have on hand but either one will work.
Using a cast iron skillet:
I have shared my love for cast iron skillets in previous posts. I love cooking with this type of skillet especially for one-pan meals that need to go in the oven. Cast iron skillets are nonstick, chemical free, inexpensive, long life span, easy to clean, and add iron to your food. Here are a few recipes I love to make with my CI skillet-

Other veggies you can use in skillet tater tot casserole:
- Shredded carrots
- Frozen peas
- Cauliflower rice (frozen or raw can be used in place of the zucchini)
- Chopped bell peppers (any color)
- Fresh chopped mushrooms (can be used in place of the zucchini)
This recipe is versatile so use veggies you like or what’s available. Zucchini happens to be in season at the moment but I love using cauliflower rice and or mushrooms as well.

Skillet Tater Tot Casserole with Corn and Zucchini
Ingredients
- 2 tbsp olive oil
- 1 pound lean ground turkey or lean ground beef
- 1/2 cup chopped yellow or red onion
- 1 cup frozen roasted corn
- 2 medium zucchini, shredded with excess moisture removed I use kitchen tea towels to squeeze out the moisture. Link at bottom of post
- 1 cup store-bought Pico, chunky salsa, or chopped tomatoes
- 1 tbsp chili powder
- 1 tsp oregano
- 1/4 tsp garlic powder
- 1/4-1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 tbsp Worcestershire
- 1 tbsp flour
- 1 cup shredded cheddar cheese, divided
- 2 cups frozen tater tots, about 40 tots
- cooking spray
- 2 green onions, sliced
Instructions
Preheat oven to 450°F
- Heat a large 12-inch cast iron skillet or other oven safe skillet to medium high heat.
- Add oil, ground turkey and onion. Cook breaking up the meat into crumbles until no longer pink.
- Add corn, zucchini, tomatoes, spices and Worcestershire. Stir to combine and cook about 5 minutes. Add flour and cook another 2 minutes.
- Add 3/4 cups cheddar cheese and top with tater tots. Bake for 15 minutes. Add the remaining cheese and cook another 5 minutes.
- Top with green onions and enjoy!
